This is a dish popular with Oriented Jews. 6 tomatoes, diced 2 green peppers, diced 1 large onion, diced 2 cloves garlic, crushed 1 cubed eggplant (optional) tsp. oregano salt, pepper 6 eggs Fry onions in oil in large skillet until golden. Saute remain ing vegetables, mixed with salt and pepper to taste, until soft, stirring occasionally to prevent sticl^g. Add oregano. Pat down and cover bottom of frying pan. Pour eggs on top of vegetables (sunny-side-up fashion). Cover skillet and simmer for 5 minutes on a low flame. Cut into 6 servings. Vegetarian “Chopped Liver*’ 1 very large onion 2 tblsps. oil 12 walnuts, grated in a blender 2 cups cook^ peas 8 hard cooked eggs Saute lightly chopped onion in oil until browned. Mash eggs and add to peas, mixing until well blended. Add walnuts and onions and keep mashing until very well blended. Fruit-nut Kugel A delicious side dish suggestion for Shabbat dinner guests: ^ cup dried apricots 2 large, tart apples, peeled 1 cup chopped walnuts 14 cup honey 2 tblsps. sugar 1 tblsp. lemon juice 5 eggs, separated Place apricots in 1 cup of boiling water and soak until cool. Drain weU. Cut apples into thin wedges. Grease a 9-inch square pan. Place apple wedges and apricots in pan. Beat egg yolks until light and frothy. Add honey, nuts, sugar and lemon juice. Blend well Beat egg whites until stiff. Fold into yolk mixture. Pour over fruit. Bake at 350 degrees for 30 minutes or until set. Serves 8. Holocaust Slide/Tape Show Now Ready There have been more than 20 showings in the past month of the slide/tape presentation “The Holocaust - a North Carolina Perspective.” Prepared by the Governor’s Commission on the Holocaust, the shows are accompanied locally by talks given by Dr. Susan Cemyak Spatz or Celia Scher, both members of the Conunission. A partial list of the presen tations includes: Rocky Mount United Methodist Church, East Mecklenburg High (5 classes of over 300 students). Temple Beth Shalom, Temple Beth El, Education Center (area Superintendents), Queens College, Queen City (Dptimists, UNCC, Mooresville Jr. High, Charlotte Jewish Federation, Assumption Catholic Church, Pritchard Memorial Baptist Church and a private showing for Mayor Gantt. The Charlotte-Mecklenburg School Board has passed a unanimous resolution declar ing a Holocaust Awareness Week. This is part of a move to establish a permanent Holocaust curriculum in the public schools. The members of the Com mission are still seeking the names of survivors, children of survivors, liberators and any memorabilia connected with the Holocaust. SUN t>-7 • MON -SAT t-« / Resolutions on the Holocaust WHEREAS, knowledge of the heritage and straggles of all of our citizens is essential to a better understanding of events and issues that affect them and thereby impact on all of our lives; and WHEREAS, we believe that all individuals, regardless of their abilities, past experiences, race, social or economic status, have the right to enjoy the widest share of freedom compatible with the equal freedoms of other people; and WHEREAS, we believe that all individuals should be given the opportunity to develop to the greatest possible extent their capacities for happy, useful, successful lives; and WHEREAS, this school system has a long history of pro viding for its students information about difficult historical events and of designing and utilizing materials to heighten stu dent awareness of the consequences of racism and abuse of power and the abuse of religious and human rights; and WHEREAS, such studies aUow students to look at the role of the individual in a complex society, to increase their interper sonal understanding, to become more receptive to different ideas and perspectives, to reason intelligratly about issues of justice and to seek to eliminate prejudice, tyranny and in humanity through education; and WHEREAS, by an act of Congress and a proclamation by Governor James B. Hunt, the nation and our state are today observing a day of remembrance of the six million Jews who were murdered in the Holocaust; and WHEREAS, the conmiemoration of this day intemationaUy is a grim reminder that the battle for equality and abolishment of bigotry is a constant one, THEREFORE, BE IT RESOLVED that the Charlotte-Meek- lenburg Board of Education join in the observance of the Holocaust, reaffirm the conmiitment to equal justice and op portunities for all people without regard to sex, race, color, religion, national origin, age or handicap and seek through the educational process to improve human relations and under standing so that atrocities such as the Holocaust wiU not hap pen in the future. BE IT FURTHER RESOLVED that the Superintendent and his staff be encouraged to work diligently to insure that these commitments are carried out to their fullest.
