Page 16-THE NEWS-Decembar. 1984 Holiday Recipes Cont’d from p. 11 Creamy Broccoli Latkes (dairy) 1-6‘A oz. can tuna in oil, drained and chopped 2 pkgs. frozen broccoli, cooked and chopped 4 tbsp. margarine or butter 4 tbsps. flour 2 cups milk 1 small onion Salt and pepper to taste Dash nutmeg ^4 tsp. paprika 1 tsp. dry mustard 1 ‘A cups grated cheddar cheese Va cup bread crumbs or wheat germ V2 cup flour 3 eggs Oil Melt margarine over low heat. Stir in flour, blending until smooth. Slowly stir in milk. Add onion. Cook mixture, stirring with wire whip or wooden spoon, until thickened and smooth. Place in 350° oven for 20 minutes. Remove and strain sauce. Add seasonings and stir in cheddar cheese until cheese is melted. Set aside. Combine tuna, broccoli, bread crumbs, flour and eggs. Add V/z cups of the sauce and stir until veil blend ed. Fry in hot shortening until golden brown. $erve with remain ing sauce, warmed over hot water in double boiler. (Low-Cal Low-Chojesterol): Use the foUowing low-fat white sauce; 2 cups qlriTnmgd milk., scs^ded and seasoned with Vi tsp. salt and daah of white pepper and thickened with 3 tb^M. cream of rice or ^tant maahed potato. Stir in only cup of lowfat grated cheese. Cheesy Zucchini Latkes (dairy) 1 egg lightly beaten 1 cup flour 1 tbap. sugar I tbsp. peppei 2 lbs. zucchini squash 1 med. Idaho potato, peeled 1 tbsp. lemon juice 1 cup sliced or chopped scallions h cup freshly grated cheese 2 cloves garlic, minced^ pepper Vs tsprsalt Oil Grate, grind, or process zucchini and potato to grated con sistency. Remove as much water aa possible by squeezing mix ture in a toweL Put mixture in a large bowl and toss with lemon juice, scaUions, cheese, garlic and egg. Blend into vegetable mix ture thoroughly. Form patties and fry in Vi inch of hot oil until golden. Drain on paper towels. Serve hot, plain or with sour cream or yogurt blended with chives. It is a story of courage and commitment. When the Syrian and ,Greek armies invaded the land of Israel, they threatened to destroy the very foundation of Judaism by imposing their way of life upon us. They trampled upon everything holy to Israel and tried to force the Jews to accept their culture which was that of idol- worship, injustice, and similar traits altogether foreign to us. The Hasmoneans did not begin comparing numbers and weapons and weighing our chance of victory. Rather, they did the one thing for them to do, which was to adhere even closer to our religion and precepts and fought ageunst the enemy with self sacrifice and dedication. Wonder of wonders! The huge Syrian armies were beaten and the vast Syrian empire was defeated. Our vic tory was complete! The enemy did succeed in contaminating all the pure oil in the sanctuary but for one little flask of oil that was seal ed by the high priest. This flask was found during the re dedication of the holy temple and used in the kindling of the menorah ¥^ch lasted miracu lously for eight days. Chassidus teaches that oil represents wisdom. The goal of the Greeks was to con taminate our wisdom to take the divinity out of Torah and to abolish those mitzvos which reminded us of our connection to G-d. We won the battle and suc ceeded in driving out the in vaders because of our commit ment to maintain the purity of our wisdom. By reinforcing our devotion to Gr-d and the Torah we had the strength to dominate to prove that quality reigns over quemtity. The story of Chanukah is ongoing. We are still the minority but we possess qual ity. This pure wisdom can only be maintained through daily study sessions in the Torah. In light of the great princi ple of the Torah, “love your fellow Jew like yourself” which is one of the basics of the Torah, we come to the urgent plea that everyone should do their utmost to en courage other Jews to start study sessions on a regular basis. This is also reflected in the way we light the candles. We light the candles near the win dow or the door to publicize the miracle and to share with others our courage and com mitment to the light of the Torah. Happy Hanukkah!
