r Page 15-THE NEWS-April, 1985 Pesach Delights Matzo Meal Popovers Vs cup water ^3 cup oil 3 large eggs 1 tbsp. sugar Vi tsp. salt 1 cup matzo meal Bring water, oil and sugar to boil in pot. Add matzo meal all at one time and mix until well blended and thick. Remove from heat and cool slightly. Add eggs, one at a time, beating well after each addition. Chill in refrigerator for at least 30 minutes. With tablespoon drop batter into well greased muffin tins. Do not smooth down surface of batter. Bake in 375° oven for about 1 hour until golden brown. Remove from muffin tins and serve while still warm. Medces 9 large popovers or 12 medium popovers. Apple Fritters 4-5 apples, peeled, cored and sliced Batter 3 eggs Va cup white wine 3 tbsp. sugar pinch of salt V2 cup water cup matzo meal In a bowl, beat eggs with a fork. Add wine, water, sugar, salt and matzo meal. Mix until a smooth batter forms. Dip apple slices and fry in oil until nicely browned. Serve with sugar and cinnamon and wine sauce.' Wine Sauce 2 cups sweet red wine 3 tbsps. sugar 1 tbsp. potato starch Put into a small pot. Mix ingredients together and bring to boil. Serve hot. Wine Chocolate Nut Cake 8 eggs, separated 1 ys cups sugar % cup cake meal 2 tbsps. cocoa Vi cup finely chopped nuts Y2 cup sweet red wine Beat egg whites with Vz cup sugar until stiff; reserve. Beat yolks with remaining sugar until thick and lemon colored. Add cake meal, cocoa and nuts and blend thoroughly. Add wine and mix well. Fold egg whites carefully into the yolks. Add to prepared mixture. Turn into an ungreased 10-inch tube pan; b£ike at 325“ about 50 minutes to an hour or until the top springs back when lightly touched. Cool before removing from pan. Gar nish with berries or sliced fruit, if desired. Serves 12 to 14. Atay / Have ypur Atteniiim ?!? The letters were delivered in bulk to the post office in sufficient time but they in advertently failed to separate them out for mailing until she called asking about them. If you received last month’s issue late it was not our fault! Seems that we are still finding that our mail is not being distributed for delivery by the individual post of fices. Why this is a recurrent “nightmare" is still under investigation — we even used a professional mailing ser vice last month. Hope this issue arrived on time! In last month’s issue on the allocations pages, the follow ing dollar amounts “vanished”. For your information the Hebrew Academy is allocated $37,300 and the Contingen cy Fund. $4,396.
