Page 19-THE NEWS-December, 1985 Chanukah Recipes i) 0 ^ ^ c 1 T^- 4 Most people in the U.S. associate potato latkes as the main dish for Chanukah; in Israel it might be doughnuts. In actual ity, any food which is fried is apropos for Chanukah. A delicious dish to be prepared for this holiday is kreplach. There is prac tically no limit to the variety of fillings for them. They are par ticularly delicious in soup on a cold winter night, but they become even more delicious as a main or side dish when they are fried. Kreplach Prepare a noodle dough as follows: 2 cups flour 2 eggs 1 tbs. water Vz tsp. S£dt Place unsifted flour on a board and meike a well in the center. Drop the eggs, water and salt into it. Work into the flour with one hand and knead until smooth and elastic. Roll out and stretch as thin as desired but don’t let it dry. Cut into 3-inch squgu-es and place a tablespoon of one of the following mixtures on each. Fold over the dough into a triangle. Press edges together with a little water. Cook in boiling salted water 20 minutes, or until they rise to the top. Drain, then fry. Makes 24 or more, according to how thin you roll the dough. Meat Filling 1 tbs. oil or fat ^ tsp. salt V2 lb. gound beef tsp. pepper ‘/2 cup minced onions Heat the oil in a skillet and cook the meat and onions in it for 10 minutes, stirring frequently. Add the salt and pepper. Cool before placing in squares of dough. Kasha Filling 1 cup minced onions 3 tbs. chicken fat, butter (if dairy} or oil 1 ‘/2 cups cooked kasha tsp. pepper Lightly brown the onion in the fat/butter/oil. Stir in the kasha and pepper. Cheese-Potato Filling (Dairy) y2 cup minced onions 3 tbs. butter IH cups mashed potatoes '/2 cup pot cheese 1 tsp. salt 1/8 tsp. pepper 1 egg Sour cream Lightly brown the onions in the butter. Add the potatoes, cheese (if pot cheese unavailable, use a rather dry large cottage cheese), salt, pepper and egg, beating until smooth. Serve with sour cream. Chicken Filling 1 ‘/2 cups ground cooked chicken 4 tbs. browned minced onion ^ egg yolk Blend all the ingredients together. H tsp. salt Dash pepper 1 tsp. pepper Chicken Liver Filling lb. chicken livers ^ cup minced onions 2 tbs. chicken fat or oil 2 hard-cooked egg yolks 1 tsp. salt 1/8 tsp. pepper Cook the livers and onions in the fat or oil for 10 minu s, niixing frequently.
