Prepare a day ahead and allow to marinate over night in the refrigerator. 1 ^303-size can garbanzo beans, drained 1 ^303-size can French style green beans, drained 1 ^303-size can corn kernels, drained 1 ^303-size can peas, drained 1 cup carrots, sliced into thin rings 1 can thinly sliced celery V2 of small head of cauliflower, broken into small flowerettes 1 Spanish onion, chopped 1 green pepper, diced % cup white vinegar % cup corn oil 2 tblsps. water 1 tsp. salt V2 tsp. pepper Mix vinegar, oil, water, salt and pepper. Place drained cann ed and fresh vegetables in a bowl. Coat with dressing. Cover £md refrigerate 20-24 hours. Serves 12-16. POTATO CASSEROLE A dairy potato casserole can be served as a main dish with one-half of a cantaloupe for an appetizer, spinach salad, and hot apple pie for dessert. 2 cups regular or instant mashed potatoes 1 cup plain yogurt 1 cup low-fat cottage cheese cup minced green pepper browned cup minced onion, browned 2V2 tblsps. butter V4 tsp. salt. 14 tsp. pepper Brown onion and green pepper in butter. To the potatoes add vegetables and melted butter and rest of ingredients. Mix well. Place in a 6-cup shallow baking dish. Bake at 350 degrees for V2 hour or until casserole is firm. Serves 4. MARINATED EGGPLANT One always looks for new ways to prepare vegetables. These marinated eggplants are good served with broiled or baked fish. 8 small eggplants, unpeeled salt oil 2 cups olive oil 1 cup medium dry white wine Cut eggplants in half lengthwise. Sprinkle with salt and let sit in bowl tor about 2 hours. Drain and pat eggplant dry. Heat a little oil in a skillet. Brown eggplant. Put into a jar. Cover with wine and olive oil. Close jar and refrigerate for 2 days.
