Meichels By Norma Barach (JTA) Now that winter is here, there is nothing like a hot bowl of soup to begin a meal, or to accompany a sandwich for lunch. BEEF-BARLEY SOUP J Ib. short ribs 2 soup bones 8 cups water Vi cup lima beans 1 cup barley 2 carrots, scraped & sliced 1 stalk celery, sliced 1 large onion, whole 2 potatoes, diced salt & pepper to taste Put short ribs, bones, and water in a 4-quart pot. Bring to boil and skim off the top. Add the remaining ingredients. Cover and simmer 2V2 hours. Add more salt and pepper if desired. Can be frozen. Excellent reheated. Serves 6. In the kosher kitchen, one can prepare either a dairy lasagna or one made with meat. Try both to see which best pleases your family. Serve either with vegetable soup and cole slaw to make a complete meal. DAIRY LASAGNA 8 oz. lasagna noodles 2 tbsp. water 1 16 oz. can tomato sauce 2 cups cottage cheese 1 tbsp. vegetable oil l/z tsp. oregano y2 lb. muenster cheese, grated Cook noodles according to package directions. Mix tomato sauce with oil £md water. Grease a 9 x 13-inch pan. Layer noodles, cottage cheese, tomato sauce, grated cheese and oregano, and repeat until all ingredients are used up. Bake at 375 degrees for 25 minutes. Serves 5-6. BEEF LASAGNA 8 oz. lasagna noodles 1 lb. ground beef 1 clove garlic, minced 1 green pepper, cut into thin strips Vi lb. mushrooms, sliced 1 medium onion, diced oil 16 oz. tomato sauce V4 cup water oregano pinch of basil Cook noodles according to package directions. Brown meat, onions, garlic, peppers and mushrooms in oil. Add tomato sauce, water, oregano and basil. Simmer for 5 minutes. In a greased 9 X 13-inch pan, layer noodles and sauce, ending with sauce. Bake at 375 degrees for 30 minutes. Library Lines By Lenora Stein The line most often heard when people visit the Speiz- man Jewish Library at Shalom Park is, “My goodness, it’s beginning to look like a library!” Gone are the empty shelves and in their place is a growing Jewish book and periodical collection for children and adults. The new library equipment (special shelving, card catalog, etc.) is being delivered. The myriad of boxes of books are getting un packed and a quality, current Jewish selection of wonderful reading materials is emerging. The library regularly re ceives more than twenty of the most popular Jewish maga zines which includes those for children. Most of these are unavailable elsewhere in Charlotte. Stop by and catch up on the very latest going on in the Jewish world. The book collection is shap ing up so that there is a wide choice of Jewish holiday books for children, always a highly requested and in-demand item. A successful Jewish Book Month celebration and Li brary dedication took place on Nov. 15. The classroom library visit program has begun in all the schools which use Shalom Park. Students are partici pating in the Great National Jewish Read-In for the benefit of the Jewish Braille Institute, a tzedakah project that assists the Jewish blind and encour ages Judaic (and other) reading for sighted children. A bibliography of children’s books in the Speizman library has been developed in conjunc tion with the I.D. Blumenthal Scholar-In-Residence weekend on January 15-16 at Temple Israel in Charlotte. Copies of this bibliography, “My Jewish Family History,” are available in the library. Donations to the Library Tribute Fund of the Founda tion are, of course, always gratefully accepted. CAJE Delivers The Carolina Agency for Jewish Education (CAJE) is a multi-media Jewish education resource center located at 1727 Providence Rd., Char lotte, NC 28207. CAJE is a unique pioneering, Jewish educational venture, serving schools, congregations and in dividuals throughout the Carolinas and southern Vir ginia and West Virginia. CAJE is a project of the N.C. Association of Jewish Men, funded through a grant from the Blumenthal Foundation and is member supported. The CAJE Resource Center has an extensive media library (including videotapes, audio tapes, filmstrips, slides, games, software, posters, etc.) in addition to print materials representing 150 quality publishers of Jewish educa- tion£il materials. CAJE has over 30 schools, congregations and individuals who have joined the agency for 1987-88, including all Charlotte Jewish schools and congregations. Membership in CAJE provides, on loan, the best and the brightest in Jewish educational materials for use in the classroom and other settings, to enrich the Jewish educational experience. Also, CAJE offers consulta tion, curriculum, teacher train ing, workshops, model pro jects, outreach and a newslet ter, the CAJE PAGE, pub lished 6 times a year. On Feb. 27 and 28, CAJE, in partnership with Temple Beth El V’Shalom, Temple Israel and The Consolidated Jewish High School in Charlotte, and Temple Emanuel in Greens boro will present for Jewish youth and teachers from throughout the Carolinas, a state-of-the-art Jewish educa tional experience entitled “Rock ’N Roll ’N Religion: The Missing Link.” The creator of this dynamic program. Aley Sheer, a Florida youth worker and musician, will be our special guest for the weekend. Shalom Park will be rockin’ and rollin’ like it never has before — and Jewishly! Many parents of young children have heard about “Shalom Sesame,” the Israeli version of Sesame Street pro duced by the Children’s Televi sion Workshop.
