Page 20-THE NEWS-March, 1988 PASSOVER RECIPES Before we know it Passover (Pesach) will be here. The first seder is April 1. It is traditional to serve fowl rather than roasted meats for the seder. Remember, desserts can be prepared ahead of time for convenience and frozen until needed. To save yourself time, prepare a cucumber salad beforehand: make enough to serve on both seder nights. Sample seder menu A: A seder plate consisting of the traditional ceremonial foods wine eggs in salt water gefilte fish with horseradish vegetable soup with homemade Pesach noodles roasted or fried chicken cucumber salad sweet potato casserole rhubarb, apples and strawberries Pesach coconut brownies tea, coffee Sample seder menu B; A seder plate consisting of the traditional ceremonial foods wine hardboiled eggs in salt water sliced carp with horseradish chicken soup with matzo balls or knaidlach stewed chicken in tomato mushroom sauce mashed potatoes asparagus banana nut cake fresh fruit basket coffee, tea SWEET POTATO CASSEROLE 4 cups mashed sweet potatoes 4 beaten eggs 1 tblsp. orange juice '^2 cup melted margarine ‘A cup honey ‘/2 cup sweet red wine cup coconut topping Mix all ingredients except coconut. Place in a round, greased pyrex baking dish. Bake at 350 degrees for about 50 minutes. Sprinkle coconut on top before serving. Serves 6-8. RHUBARB, APPLES AND STRAWBERRIES 8 stalks rhubarb 1 pint fresh, sliced strawberries 2 diced red apples 1 cup water sugar to taste Boil fruits and water on low heat for 15 minutes. Drain water and add sugar. PAREVE KNAIDLACH 2 egg yolks ‘/2 teaspoon salt 2 egg whites, stiffly beaten ‘/2 cup matzo meal Beat the egg yolks and salt until thick. Fold into the egg whites, then gradually fold in the matzo meal. Chill 1 hour. Moisten hands; shape mixture into V2-inch balls. Cook in boiling salted water 20 minutes. Serve in dairy or meat soups. Makes about 16. TRADITIONAL CHAROSES ‘A apple, chopped cup walnuts, finely chopped ‘A tsp. cinnamon ‘A tsp. honey 1 tblsp. red wine Mix all ingredients together. Chill until serving. PASSOVER PIZZA Crust 3 cups matzo farfel 2‘A cups boiling water 5 eggs salt, pepper Pour boiling water over farfel to make it soggy. Beat eggs together with salt and pepper. Pour over farfel and mix well. Spread mixture into large grea^d baking pan. Bake 350^ 30 min. until set. Topping 1 (11 oz.) can tomato sauce with mushrooms 8 slices American cheese garlic powder onion powder Cover baked pizza dough with tomato-mushroom sauce. Grate cheese and sprinkle over sauce. Sprinkle with garlic power and onion powder. Bake until cheese melts — 8-10 minutes. Tour Packages Ready for “Nabucco” Special tour packages to Israel, which include tickets to the much-heralded production of Verdi’s “Nabucco” in 1988 in Jerusalem, are now avail able from travel agents and tour packagers throughout the country. “Nabucco” is the major highlight of Israel’s year-long celebration of its 40th anniver sary of independence. A dozen performances of the Verdi masterpiece will be given May 15-29 in Jerusalem — an ac tual site of the opera’s story. Twelve-day tours steirting at around $1,600 have been developed, which include air fare, hotels, meals and sight seeing in Israel, as well as tickets to “Nabucco”. “Nabucco” will have a cast of 1,100 and four alternating sets of principals, including Ghena Dimitrova, Grace Bum bry, Olivia Stapp, Piero Cap- puccilli, Paul Plishka, Renato Bruson, Ingvar Wixell and Kurt Rydl. Michel Plasson wiU conduct the Royal Philhar monic Orchestra and direct the 250-member Pro-Musica Chorus of London and the par- ma Choral Society. Vittorio Rossi, one of Europe’s best known designer/directors, will direct and provide the sets and costumes. Performances will be out doors at the 7,700-seat Sul tan’s Pool (Merrill Hassenfeld Amphitheatre), just outside the Old Walls of Jerusalem. From 50,000 to 70,000 tourists and opera lovers are expected to attend.
