Page 20-THE NEWS-April, 1988 PASSOVER RECIPES On the intermediate days of Passover, when the family seems tired of the same old stuff, try making corn beef and cabbage for variety. Serve a half of a grapefruit as an appetizer, some brownies for dessert £uid your meal is complete. Remember to cook the com beef a day ahead so it can be chilled, sliced and the fat removed from the ‘’gravy.” This and the other recipes are good any time of the year. CORN BEEF AND CABBAGE 2 bay leaves 4 lbs. pickled brisket 6 carrots, cut into quarters 2 med. onions, quartered 8 med. potatoes, cut into quarters Med. head of cabbage, shredded Place brisket in large pot; cover with cold water, cover pot. Cook 3‘/2 hours. Remove corn beef from pan, wrap in aluminum foil and refrigerate. Save liquid in refrigerator until next day. Remove chilled liquid, remove fat from top. Place in large pot. Add vegetables and cook 40 minutes or until all vegetables are tender. While vegetables are cooking, slice meat, put back in aluminum foil and heat in oven. Place meat on platter, surrounded by vegetables. Serves 6-8. FRUITED POT ROAST This is best when prepared a day ahead of time so you can slice the meat after it has been chilled. 2 cloves garlic, cut up 2 large onions 2 tbs. oil 4 lbs. brisket or chuck steak ginger 1 cup dried apricots 1 cup dried prunes 1 cup water (more if necessary) 1 cup sangria wine Brown onions and garlic. Add meat and brown well. Sprinkle meat with ginger. Add fruit, wine and water. Simmer on a low flame, covered, for 2-3 hours or until tender. Chill. Slice and reheat in gravy. Serves 8. CHOCOLATE MOUSSE PIE 8 oz. semi-sweet chocolate cup water 8 large eggs, separated H cup sugar 1 tsp. orange liqueur or super-strong coffee In saucepot over low heat, melt chocolate in water, stirring un til smooth. Remove from heat and cool slightly. Beat in egg yolks and flavoring. In large mixing bowl beat egg whites until foamy, gradually beat in sugar until stiff peaks form. Stir one quarter of the whites into chocolate mixture to lighten; fold chocolate mix ture into the remaining whites. Pour 4 cups into oiled or sprayed 9-inch pie plate that has been sprinkled with sugar. Chill remaining mixture. Bake at 350° 20-25 minutes or until just set. Cool slightly; chill for 1 hour. Center will fall, forming a pie shell. Spoon chilled chocolate mixture into chill ed shell. Chill 3 hours overnight. Garnish with whipped topping. CHOCOLATE TORTE 14 oz. semi-sweet chocolate, melted and cooled ^2 lb. margarine or butter 1 ‘A cups sugar 10 large eggs, separated 2 tbs. orange flavored liqueur In large mixing bowl, using electric beater, beat yolks well. Add sugar gradually and beat until thick. Stir in orange liqueur. In separate bowl beat egg whites until peaks form when beater is lifted from bowl. Stir one quarter of the whites into the chocolate mixture to lighten. Fold in remaining whites quickly and lightly. Pour into a 9-inch spring-form pan and bake in a 350® oven for 1V2 hours. Cool on rack. Frost with whipped topping or sprinkle with superfine sugar pulverized in processor.
