Page 20-THE NEWS-June/July, 1988 Meichels By Norma Barach (JTA) Now that summer is here, there is nothing like a dairy meal. Vegetables are abun dant and are p>erfect for a light lunch or supper. DAIRY NODDLE KUGEL A dairy noodle kugel is excellent for brunch or for a light luncheon. Since June is a time of entertainment for graduations and June brides, add this to your repertoire. Va stick melted butter 8 oz. cooked, drained medium noodles 1 cup cottage cheese, with pineapple 1 cup vanilla yogurt 3 eggs ‘A cup sugar 1 16-oz. can apricot halves, drained Mix all ingredients except apricot halves. Pour into a greased, 9-inch pan. Top with drained apricot halves. Bake at 350 degrees for about 1 hour. MARINATED VEGETABLES A cold marinated salad made from several cans of vegetables is very easy to make. Prepare a day ahead and allow to marinate over night in the refrigerator. 1 ^303-size can garbanzo beans, drained 1 ^303-size can French style green beans, drained 1 ^303-size can corn kernels, drained 1 ^303-size can peas, drained 1 cup carrots, sliced into thin rings 1 cup thinly sliced celery V2 small head cauliflower, broken into small flowerettes 1 Spanish onion, chopped 1 green pepper, diced ¥4 cup white vinegar V4 cup corn oil 2 tbs. water 1 tsp. salt ‘A tsp. pepper Mix vinegar, oil, water, salt and pepper. Place drained canned and fresh vegetables in a bowl. Coat with dressing. Cover and refrigerate 20-24 hours. Serves 12-16. POTATO CASSEROLE A dairy potato casserole can be served as a main dish with one- half of a cantaloupe for an appetizer, spinach salad, and hot apple pie for dessert. 2 cups regular or instant mashed potatoes 1 cup plain yogurt 1 cup low-fat cottage cheese 14 cup minced green pepper, browned cup minced onion, browned 2V2 tbs. butter V4 tsp. salt 14 tsp. pepper Brown onion and green pepper in butter. To the potatoes add vegetables, melted butter and rest of ingredients. Mix well. Place in a 6-cup shallow baking dish. Bake at 350 degrees for Vz hour or until casserole is firm. Serves 4. MARINATED EGGPLANT One always looks for new ways to prepare vegetables. These marinated eggplants are good served with broiled or bsiked fish. 8 small eggplants, unpceled salt oil 1 cup medium dry white wine 2 cups olive oil Cut eggplants in half lengthwise. Sprinkle with salt and let sit in bowl for about 2 hours. Drain and pat eggplant dry. Heat a lit tle oil in a skillet. Brown eggplant. F*ut into a jar. Cover with wine and olive oil.
