Page 27-THE NEWS-November, 1988 Meichels The holidays are just around the comer. Want something a little different to prepare for Thanksgiving dinner? With Chanukah coming early this year, you might want to try some new recipes for your Chanukah parties. Both of the poultry recipes are from the Fabulous Favorites ala B’nai B’rith Women, published by Charlotte Chapter BBW in the early ’70s. BLUEBERRY DUCK 1 salted cut-up duck V? cup brown sugar V2 cup blackberry wine 1 can blueberries, drained (save V2 cup juice) Place duck on rack in pan; prick skin. Bake in 325" preheated oven about 2 hrs. Turn every half hour to drain fat. Remove from oven when brown; place in covered casserole. Heat together brown sugar, wine and blueberry juice in saucepan. Pour warm sauce over duck. Add blueberries, cover and place in oven 20 min., turning once. Serve with wild rice. Will feed 4 persons. — Judy Gaynor MOTHER’S TASTY TURKEY 2 chopped onions 3-4 carrots, cut or whole 4-5 chopped celery stalks 2-3 crushed garlic cloves 1 tbs. rendered chicken fat 1 turkey, any size Combine onions, carrots, celery, garlic and chicken fat in roaster. Saute on stove for 20 min. at low heat. Add turkey and giblets. Cover roaster; bake in 300® preheated oven for 4 to 5 hours (until done, depending on size of turkey). Before turkey is done, drain fat from pan; add 1 cup water. Cover; continue cooking to render pure turkey gravy. This recipe may also be made with chicken or roasts. — Rachel Goodman Traditional Chanukah foods are prepared in oil in remembrance of the miracle of the oU in the Temple in Jerusalem liberated by the Maccabees. Traditionally in the Western world we have always regarded potato pancakes as the quintessential Chanukah food, but in Israel they opt for “sufganiot” (jelly doughnuts). ISRAELI SUFGANIOT 1 egg 3 tbs. sugar 1 cup self-rising flour 5 tbs. sour cream 1 tsp. vanilla “A tsp. grated lemon rind oil for deep frying {4-8 cups} confectioners sugar Beat egg and sug£u*. Add remaining ingredients. Mix until smooth. Heat oil in a deep fryer or deep pot until very hot. Drop tablespoons of dough in pot and cook on medium heat until brown — about four at a time. Sprinkle with confectioners sugar. Makes 10*12 doughnuts. RASPBERRY SQUARES cup margarine ^ cup sugar i egg 1 tsp. vanilla 1 pinch salt 2 cups plus 2 tbs. flour Vi cup chopped walnuts 1 10-oz. jar raspberry jam or jelly Cream margarine and sugar. Add egg, vanilla, salt, and well (by hand). Add 2 cups of flour, add nuts. Batter will be thick Spread out in lightly greased 9" x 13" baking pyrex pan. Pat all around bottom and sides. Leave small amount to put on top of jam. Spread jam with spatula. Mix 2 tbs. flour with remain ing batter. Add a little cinnamon if desired. Put dabs over jam — or take very small amounts with a teaspoon and dot over entire surface. Bake in 350® oven for 35 min. or until lightly browned. When cool, cut in squares.
