Page 27-THE NEWS-December, 1988 Meichels Looking for an ideal dessert to serve during the Chanukah cele brations? One tradition connected with Chanukah is the serving of cheesecake, which pays homage to the story of Judith, the woman who played an important role in the Maccabean victory. Here are two recipes for cheesecake for the holiday season, one is rich and flavored with lemon, the other is less rich. LEMON CHEESECAKE Crumb Crust 11'i cups graham-cracker crumbs 1 tbs. sugar 14 cup butter, cut in pieces Filling 5 (8 oz.) pkgs. cream cheese, softened 1 Vi cups sugar 1 tsp. vanilla 3 tbs. lemon juice Grated peel of 1 lemon 4 eggs 2 egg yolks 3 tbs. flour V2 tsp. salt V4 cup cream or sour cream Lemon Curd 4 egg yolks ‘A cup sugar 3 tbs. lemon juice 1 tbs. grated lemon peel 2 cups sour cream for garnish (optional} Combine crumbs, sugar and butter in food processor or mixing bowl and blend thoroughly. Line a 9 or 10-irch springform pan with crumbs and refrigerate. Beat cream cheese until light and fluffy. Add sugar, vanilla, lemon juice, lemon peel and blend thoroughly. Beat in eggs and egg yolks one at a time, beating weU after each addition, until smooth. Add flour, salt, and cream and mix well. Pour into cold crumb crust. Bake at 425® for 10 minutes. Reduce to 300® and bake 55 minutes or until golden brown. Cool. Lemon Curd: Beat egg yolks and sugar. Add lemon juice, lemon peel and cook, stirring constantly until thick, about 5 minutes. Set aside to cool. Just before serving, place lemon curd on top of cold cheesecake. Circle with sour cream. M^es 1 large cheesecake or about 4 dozen minisize cheesecakes. Recipe can be divided in half for a smaller cake. POLISH CHEESECAKE SOUFFLE 2 lbs. farmer cheese or pot cheese 1 cup sour cream 1 cup sugar 2 tsp. vanilla ‘A tsp. sidt 1 crumb crust (see preceding recipe for ingredients. But, bake at 350° for five minutes. Cool before filling} 2 tbs. flour 6 eggs, separated 1 tbs. lemon juice 1 tbs. grated lemon peel powdered sugar Rub cheese through a sieve into a large mixing bowl. Add sour cream, V2 cup sugar, vanilla, egg yolks, lemon juice, lemon peel, and salt. Blend well. Beat egg whites until stiff, gradually beating in remaining Vt cup sugar until soft peaks form. Gently but thoroughly fold beaten egg whites and flour into cheese mixture. Pour into baked crumb crust lined 9 or 10-inch springform pan. Bake at 325® 1 hour, without opening oven door. Cake should be golden brown on top, which may require an additional 10 to 15 minutes. Turn oven off and allow cake to remain in oven with door closed 2 hours. Open door and allow cheesecake to stand in oven 1 hour longer. Chill. Just before serving, sprinkle with powdered sugar.
