Some of the rea sons for this custom include that the Shmurah Matza is the closest replication of the original Matza the children of Israel ate when they left Egypt in haste. This is es pecially true of the hand-baked Shmurah Matza where no ma chinery is used and the matza is prepared and baked by hand in the old fashioned way. In addition the Shmurah Matza is baked with extra care which be gins from the time of selecting and milling the grains for wheat. inDTn Di' opo ■‘7‘7n‘7 65-n ■7?ny' JiiDiyn rQ'Nn jiQipd 'padii Community-Wide Service for Hazikaron Israel Memorial Day Thus the name Shmurah which means guarded. The matza is made of only two ingredients, nat ural unbleached wheat and pure well water. The entire process of baking the matza including the mixing and kneading needs to be completed in less than 18 min utes. The matzo is baked in an old style brick oven fired by wood logs which reach very high tem perature. The average time it takes to bake the matza is less than three minutes. The matza bakery shuts down production every 18 minutes and goes in to a total scrub down.
