The Charlotte Jewish News - May 2014 - Page 5 pWhat’s Your Dish? i % y % % Nana’sRuggieRecipe, Tracy Brown 2-3/4 c. all purpose flour 2 eggs 1/2 e. vegetable oil 1/2 e. water 2 t. baking powder 1/2 t. salt 1/2 e. sugar Cinnamon and sugar mixed to your taste Golden raisins (soak in warm water for 30 min. and drain be fore using) Mix liquids together and add to flour in stand mixer on low to medium. Mixture will be a soft dough (adjust flour/water as neeessary). Put dough in refrig erator till firm (about an hour). Roll out a portion of dough on a lightly floured surfaee to about 10”-12” in diameter, about 1/8” thiek, in eirele form. Sprinkle einnamon sugar mix generously over dough and gen tly rub into surfaee. Cut into 6” long pie shapes, about 6-8 per eirele. Sprinkle on raisins and roll eaeh triangle into ereseent shape then sprinkle einnamon sugar over rolled eookie. Plaee on eookie sheet eovered with a silpat or parehment paper. Bake in preheated oven at 325 de grees for 15-18 min. Continue till all eookies are formed. Makes about 24-32 eookies Variations: Eliminate raisins and substi tute ehoeolate ehips. Spread aprieot preserves or fig jam over rolled dough prior to rolling into ereseent. Oil/butter baked eookies when they are still hot from oven and sprinkle with more einnamon sugar. Grandma Gizzy’s Chicken Pa- prikash with Rice, Gail Baron Serves 4 1 whole eut up ehieken 1 Ig. ehopped onion 1 ehopped green pepper 2-3 ehopped garlie eloves 1 Ig. tomato, ehopped fine 1 e. white riee Szeged Paprika, salt, pepper Heat some oil in large skillet with a lid. Brown ehieken pieees on all sides for a few minutes per side, seasoning parts as they brown. Use a lot of paprika. Remove to a bowl. Brown onion, peppers in skillet, till soft, adding garlie for last eouple minutes. Add baek in ehieken, along with any juiees that eolleet in bowl. Mix in tomato, eover and simmer on low for about 40 min. Remove ehieken breasts so they don’t overeook. Add in riee, making sure all kernels are submerged in liquid. Cover and eook on low till riee has absorbed all liq uid. Add baek ehieken breasts and serve. Notes: Any reeipe for spaetzle ean be substituted for the riee. Drop spaetzle into liquid. For additional riee, add 1 Ig. ehopped tomato per eup of riee. Dairy Kugel, Randi Lan 1 bag of egg noodles 1 paekage eream eheese 8 oz. sour eream 5 eggs 1/2 e. sugar 2 e. milk Cinnamon to taste Raisins (optional) Preheat oven to 350 and spray a 9” x 13” pan. Cook noo dles as direeted. Mix remaining ingredients (exeept the raisins) in the blender. Drain noodles and add mixture and raisins. Pour in pan.
