Fresh Vegetables in the Diet
Few people realize the close connection
existing between the eye, the appetite,
the digestion, particularly in the
'^ase of persons not in perfect health.
It is a proven fact that food eaten
^ith relish and satisfaction is more com
pletely digested and absorbed than that
®aten under protest, and without satis
faction. The dish which appeals to the

it looks, and is eaten with relish, it

This is one great reason why every-

easily be made into attractive dishes,

think more of its value. It is one of the
easiest vegetables to grow, and many
attractive dishes may be made in a short
time. For instance, did you ever think
of spinach soup? It can easily be made
in the order of any cream soup. The
spinach must first be boiled until it is
very tender, then pressed through a
sieve, or cut in very small pieces, then
added to the stock.
Spinach may also be boiled in salted
water, put on a platter, and garnished
with attractive shapes of beets or hard-
boiled eggs.
