PAGE TEN THE ECHO NOVEMBER, 1941 MRS. SILVER MANN BAKES A JAPANESE FRUIT CAKE I"'-'- L"' After setting her stove for 350 degrees and greasing three nine-inch pans, Mrs. Mann starts mixing ingredients. She mixes K cp. Crisco with 2 cps. sugar and 1 egg yolk. Mixes 3 cps. flour, 3 tsp. baking powder, I dash salt, and adds, with 1 cp. milk, to the first mixture. She beats 4 egg whites and folds in last. After a thorough mixing she places it in pans. To third layer she adds 1 tsp. cinnamon, 1 tsp all spice, and then places in oven;: she bakes layers until brown. For Filling she uses l?i cps. o£ boiling water, 1 cp. sugar, juice of 3 lemons, 3 egg yolks, and 4 tblsp. flour. This she mixes well and cooks until thick. Placing third layer in center, she spreads on filling, add* ing coconut. This makes a very del.icious cake.
