FAMOUS SWEET POTATO PUDDING OF 1828 The Southern cook truly deserves all the laurels she has earned for her way with a Sweet potato. With this nutritious, yellow vegetable—considered common fare by most meal planners—she can turn out dishes fit for a kings taste. Sweet po tatoes are a favorite vegetable in Southern homes, yet they are frequently prepared in such tasty, un usual ways that they are scarcely recognized as a vegetable. The Southerner often uses the sweet potato as a basis for pie, puddings, and souffles. Preferred for recipes is the yellow sweet potato— not the white, dry variety. Here is a superb sweet potato recipe that has been handed down through several generations in one Southern family. It is called "Famous Sweet Potato Pudding of 1828.” V4 teaspon mace 1 cup orange juice 6 egg whites Va cup sugar 1 tablespoon slivered citron 1 pound cooked and peeled sweet potatoes 1 cup sugar Vl cup fortified mar garine, melted 6 egg yolks, well beaten 1 tablespoon grated lemon rind Rub the sweet potatoes through a sieve. Add one cup of sugar and margarine. Combine with beaten egg yolks, lemon rind, mace, and orange juice. Beat the whites until stiff and fold care fully into the sweet potato mixture. Pour the pudding into a well-margarined three-quart bak ing dish. Sprinkle with one-fourth cup of sugar and slivered citron. Bake in a 350-degree oven for' about one hour. This pudding will serve eight to ten people. The most momentous question before this country today is, "How much is the down pay ment.^” At the celebration of the Chinese New Year, one of their most honored observations is paying off all their old debts. And we send missionaries to China! CLEANLINESS CLIPS Washing Ways For Rainy Days Rain and mud spatters can be removed from nylon hosiery and legs at the same time. Just rub stockinged leg with soapy cloth or paper towel^ rinse off with a clean damp cloth, and let the stockings dry while being worn. Mud spots at the hemline of a coat also yield easily to a quick application of warm suds on a damp cloth. Rinse by rubbing with the same cloth wrung out in warm water. Brush coat with stiff brush to remove remaining moisture. Travel Tip Have you ever tried providing the children with clean socks to wear over their shoes in the car? This eliminates soiling the upholstery—and it’s easy to suds socks at home or on overnight stops while traveling. Clothes that have been dampened for ironing can be placed in big paper grocery bags until time to iron. This helps to distribute the moisture even ly and still allows enough air to prevent mildew. Recipe For a Clean Picture A picture needs its face washed now and then. A tired, dust-streaked picture should be taken apart so both sides of the glass can be washed. Use a putty-like cleaner on the mat or give the picture new life with a fresh mat. Wash metal or wood frame with thick soapsuds; then reassemble, and paste across the backing to keep out dust. Hardly anybody needs to be reminded that a washable fabric is the best money’s worth. But even the woman who shops with an eagle eye for washable labels on materials may forget that the rest of a garment must be washable, too: buttons, shoulder pads, belt lining, thread, binding tape. Choose carefully so you don’t sew disappointments into your own or your child’s wardrobe. A well-dressed man often reflects the affection ate care of the little lady at home whose expert laundering keeps him well turned out at all times. Have you learned to wash your hands properly? Look to your towel for the answer. A soiled towel is proof that the user relied on it to do the last part of the cleaning—instead of plenty of soap, water, and "elbow grease.” Use soapy water to sponge a stain made by car bon paper.
