fourth book, Sara Foster’s Southern Kitchen, will be released in April, just before
the Beaufort Wine & Food Weekend, where it will be featured.
Chef-owner of Revolution, Jim Anile, will also be lending his talents to the
Beaufort Wine & Food Weekend. Once executive chef at Yosemite National Park’s
five-star Ahwahnee Hotel, Anile also spent time cooking in Asia, London and
several five-star resorts. He made the move to North Carolina in 2002 to work
at II Palio in Chapel Hill before opening Revolution in downtown Durham. In
addition to Anile’s mentions in Bon Appetit, Southern Living and Coastal Living,
Revolution has been written up in the New York Times article “The 41 Places to go
in 2011.”
Also joining the ranks are the owners of Zely & Ritz—Chef Sarig Agasi and
partners Richard Holcomb and Jamie DeMent. Zely & Ritz, a tapas-style restau
rant in downtown Raleigh, sources much of its raw ingredients from Durham’s
Coon Rock Farm, co-owned by Hokonib and DeMent. The restaurant has been
recognized as one of the 20 best organic restaurants in the country by Organic
Style Magazine and also boasts a wine list that has won Wine Spectators “Award of
Excellence.”
Among the winemakers is Gustavo Gonzalez, Associate Winemaker at Robert
Mondavi Winery. Gonzalez is in charge of all the red varieties, including cabernet
sauvignon, merlot and pinot noir. In addition, he oversees the winemaker for the
sauvignon blanc Botrytis. The Robert Mondavi reserve cabernet has consistently
received high tasting scores since its debut in 1971— a tradition maintained by
Gonzalez.
Advanced sommelier Inez Ribustello of On the Square in Tarboro will be
returning for a second year. Inez and her husband, Stephen, who will be a guest
chef, began their careers in New York City. The couple met while working at the
famed Windows on the World restaurant on the 106^^ and 107*^^ floors of the
North World Trade Center Tower, where Stephen was sommelier and Inez was
beverage director. The Ribustellos were not at work when the towers collapsed
on September 11, 2001, but lost dozens of friends and coworkers. They made the
move to North Carolina and opened On the Square in 2002. Inez manages a list
of more than 500 wines which have received Wine Spectators “Best Of” award
of excellence. She was named second runner up in the American Sommelier
Competition’s Best Sommelier in America competition in 2009. Inez and Stephen
will be featured at a Winemaker Dinner at Chef’s 105 during the Beaufort Wine
& Food Weekend.
