If duplicate recipes are received, the one with the earliest postmark will be the one considered. 3 tablespoons flour 1 teaspoon salt 1/2 teaspoon celery salt 1/4 teaspoon garlic salt 1/4 teaspoon pepper 1/2 teaspoon ginger 3 pounds chuck, cut into 2-inch cubes 2 tablespoons shortening or bacon fat 1 1-pound can whole tomatoes 3 medium onions, sliced 1/3 cup red wine vinegar 1/2 cup molasses 3/4 cup water 6 carrots, cut into diagonal 1-inch pieces 1/2 cup raisins 6 potatoes, pared and quartered Combine flour, salt, celery salt, garlic salt, pepper and ginger in small bowl. Toss beef cubes in mixture. Melt short ening in large Dutch oven over medium heat. Add beef cubes and brown. Add tomatoes, onions, vinegar, molasses and water. Bring to a boil over high heat; cover and simmer about 2 hours. Add carrots, raisins and potatoes; simmer 30 minutes longer or until vegetables are tender.
