Gains Reported In MUlConsumptioii Per Capita In 1956 Report Is Released By National Dairy | v Council Americans drank two more quarts of milk per person in 1956 than the year before and set a new all-tiri?e record for cheese consump tion. A new record was also set for cottage cheese consumption. Ice cream was purchased at a rate nearly double the 1935-39 average. Butter consumption in 1956 drop ped .a tenth of a pound, but this figure was still second highest of the last five years. These facts were announced this week by the National Dairy Coun cil with the publication of its an nual statistical study, “How Amer ’ icans Use Their Dairy Foods." On the production side, milk pro duction in 1956 was 748, pounds of milk for each man, woman and child in the United States. The dairy foods consumed last year processed and manufactured from an average of 699 pounds per person. This left a surplub of 49 pounds per person, one pound per person less than in- 19§5 and pounds per erson less than the peak surplus of 71 pounds per per' ,son in 1953—an improvement of 31 per cent. How did America produce a rec ord amount in milk with fewer dairy cows ftn the farms and a lar ger population to feed ? Through greater milk production per cow— -6,006 pounds per cow in 1956, the first time that figure has exceed ed 6,000. Price-wise, also, the dairy foods industry has a good story to tell to the homemaker. According to the Dairy Council publication, the av erage retail price for dairy foods has risen only 8 per cent above the 1947-49 average as against a 12 per cent average rise for all foods. ROTARIANS QUIZZED Rotarians at -last week’s meet ing enjoyed a geographical quiz, which was conducted by Gilliam Wood and strangely enough the Rotarians were better acquainted with various places in- the world than Mr. Wood expected, with very few of the questions going unan swered.
