The Herald Kitchen With the coming of early summer there is little time and no inclination to tarry in the kitchen. Then, it is time for the hcmemaker to take advant age of the convenient foods available to her. A real taste treat for the family most any time is a homemade piej Homemade, in some instances, means ac tually assembling. We do it quite often and are. real pleased with the results. Our most recent effort was a combination of a frozen pastry shell baked and cool ed . . . piled with sweetened sliced strawberries over which we spooned prepared canned strawberry pie filling as a glaze, then topped with sweetened whipped cream. This one should be assembled at the last minute before serving since the juicy strawberries will cause the pastry to become soggy. But, it is worth ft, we think. We are quite fond of strawberry pie but we think it is some sort of a crime to cock the berries They are just too tasty and colorful to apply heat to them except for making preserves. For that reason we try to use them in their natural state. The Pie Filling Institute suggests making Friday pie day. We don’t limit pie to any one day but must limit it somewhat in our menus because a piece of pie is certainly calorie laden. If you don’t happen to have f{e s h strawberries available and you have a hankering for strawberry pie try this Crispy Pink Pie sug gested by the institute. This one includes the canned strawberry pie filling. Crispy Pink Pie 1 can (1 lb 14 oz.) pear halves, drained. 1 nine-inch unbaked pastry shell. 1 can (No. 2) strawberry pie filling. 1 tablespoon lemon juice. % cup flour. % cup sugar. 1 teaspoon cinnamon. 1/3 cup butter or margar ine. Cut pear halves in half lengthwise; arrange in pas try shell. .Combine pie fill ing and lemon juice; pour over pears. Combine flour, sugar and cinnamon; cut in butter and sprinkle over fruit. Bake at. 425 degrees for 30 minutes or until light ly browned. Add canned pitied dark sweet cherries to your next fruit salad and serve it in a fresh pineapple shell. A good combination for a fruit med ley is fresh pineapple chunks, banana slices and dark sweet cherries folded into sour cream. Here’s how and it’s called Dark Cherries Ha waiian. Dark Cherries Hawaiian 1 large pineapple. 1 can (1 lb.) pitted dark sweet cherries. Vi cup flaked coconut. 1 small banana, sliced. 1 teaspoon vanilla extract. IVi cups dairy sour cream. SHOP I. N. Scoop out pine apple, leaving one-half inch shells. Dice fruit. Drain cherries; reserve one-half cup syrup for future use. Combine diced pineapple, cherries, coconut, banana and vanilla; mix well. Chill two hours. Combine reserved cherry syrup and sour cream. Fold sour cream mixture 'in to cherry-fruit mixture and fill pineapple shells. Serves six. A quickie the kiddies and grownups alike will like for dessert is Pet-Ritz’s frozen gg custard which now comes in individual foil cups. They are fail-proof and bake in just one hour along with an oven meal. Maybe you are among those ol us who have trouble working out a dash-of-this and-pinch-of-that recipe for old fashioned baked custard. Pet Milk Company has done it for us.
