Beef And Peppers Rama 1 teaspoon Tabasco, divid ed. 1 lb. ground beef. 1 teaspoon salt. V\ cup grated Parmesan cheese. 2 tablespoons minced pars ley. % cup packaged dried bread crumbs. 1 egg, beaten. 1 medium onion, chopped. 1 can (1 lb.) tomatoes. 1 can (6 oz.) tomato paste. 1 can (3 oz.) mushrooms. 4 green peppers, cut into lengthwise pieces. 1 x k teaspoon Italian season t ing. Vj teaspoon sugar. 1 bay leaf. 1 clove garlic, Vz teaspoon Tabasco over ground beef. Add salt, cheese, parsley, bread crumbs and ! egg; mix well. Shape into '2 small balls. Brown meat . balls in hot fat in large skil let. Remove and set aside, j Saute onion until tender; add 'omrtoes, tomato paste, mush ■ooni liquid and remaining Tabasco and seasonings. Bring to a boil; add green peppers and mushrooms; cover and limmer 10 minutes, stirring , occasionally. Remove bay ’eaf and garlic clove; add I - meatballs and simmer 10 minutes longer. Serve over . noodles. Makes four gener ics servings. Look for specials at the meat counter. Consider some if the less-familiar cuts of beef. Take boneless chuck, | "or example. I Tomato-Braised Beef ■ 1 boneless chuck (abotjt 3Vi lbs.) 1 cup slic'd onion. 1 large clove garlic, mine- • cd. 2 teaspoons oregano, crush-. 1 , ed. 3 tablespoons butter or margarine. 1 can condensed tomato soup. 1 cup water. Generous dash pepper. . ' Trim fat from meat; plaice in roasting pan. Bake at 350 d-'o-ces for one and one- ! half hours. Spoon ofi? fat. Meanwhile, in saucepan, cook onion, garlic and oregano in ] butter until onion is tender. Stir in remaining ingredi- ] ents. Pour over meat.
