A cold plate, with • variety of cold cuts shouts for our old favorite, potato salad. Our favorite recipe has come down unwritten from our mother who made the most delicious potato salad from the leftover mashed potatoes. Now comes the instant mash ed potatoes and a real ele gant recipe for potato salad with a name which indicates someone' experimented and come up with a winner. This potato salad is colorful and shapely. You can cut it in squares, wedges, or even in rounds by using a sharp bis cuit cutter. Experiment a bit and try this recipe. Serendipity Potato Salad Instant Mashed Potatoes (for six servings). 1/3 cup mayonnaise or sal ad dressing. 1 tablespoon vinegar. 1 can (414 oz.) deviled ham. 1 tablespoon sliced green onion. Com bine with remaining ingredi ents except lettuce and toma toes, mixing well. Line an eight-inch square pen with waxed paper; turn mixture into pan. Chill overnight. Serves six. Another recipe we came upon for potato salad may appeal to you. We haven't tried it yet but K is made from frozen French fries (dropped into boiling water then removed from the heat and allowed to blanch five minutes) cooled and mixed with the regular favorite in gredients of hard-cooked eggs, celery, minced onion, vinegar and salad dressing. Os course, the barbecue grill is already out and in Get Ready For Picnic Time use several evenings a week. Delicious yellow and white corn is now coming into the market in abundance and is economical enough to include some corn-on-the-cob for the next barbecue crowd. Just remove the husks and silks from ears of corn. Place each ear on a piece of heavy duty foil. Spread each with one tablespoon soft butter. Sprinkle with salt and pepper.
