During the busy days ahead the special occasions are varied and numerous, and the demands for festive offerings from the oven are frequent. It is time to make a coco nut cake and we will vote for Mrs. Carl Watts’ recipe as be ing among the best we have ever had. She first furnish ed us with a copy of her recipe in 1964 and it still stands tall in our book of recipes. We can’t imagine Christmas without a frgsh coconut cake standing by. Coconut Cake 2 cups cake flour. IV4 cups sugar. % cup Crisco. % teaspoon salt. 2/3 cup milk. 3 teaspoons baking powder. 2 eggs unbeaten. \k cup milk. 1 teaspoon vanilla. 1 teaspoon butter flavoring. Cream two minutes or more the sugar, shortening, salt, flour and two-thirds cup milk, then stir in baking powder. Add eggs one at a time, one-half cup milk and flavoring. Beat at medium speed for two minutes. Pour into three nine-inch cake tins and bake at 350 degrees for -20 to 25 minutes. Frost withs Never Fair Frosting. Fffling 2/3 cup sugar. 1 teaspoon flour. 2 egg yolks. 1 small can evaporated milk. % package frozen coconut or 2 cups fresh grated co conut. 2 tablespoons margarine or butter. Combine all ingredients in saucepan and cook until thickened enough to spread between layers. Never Fail Frosting 1 cup sugar. Vi teaspoon cream of tar tar. 2 unbeaten egg whites. 3 tablespoons water. '1 teaspoon vanilla. Let water boil in bottom of double boiler then com bine all ingredients except vanilla in top of boiler. Beat with mixer at high speed un til frosting holds shape— about 5 minutes. Remove from heat. Add vanilla and stir. For the chocolate buff in your house you can’t beat Mrs. Watts’ Feathery Fudge Cake. It is yummy! Feathery Fudge Cake 2/3 cup soft butter or margarine. 1% cups sugar. 2 eggs. 1 teaspoon vanilla. 114 teaspoons soda. Vt teaspoon salt. 2 squares (1 oz. each) un sweetened chocolate, melted. 214 cups sifted cake flour. 114 cups ice water. Cream together butter, sug ar, eggs and vanilla until fluffy (beat five minutes at high speed scraping bowl oc casionally to guide batter into beaters); blend in cooled chocolate. Sift together flour, soda and salt; add to creamed mixture alternately with ice water, beating well after each addition. Bake in three round cake pans in 350 degree oven for 30 minutes or until tests done. Filling 2/3 cup sugar. 1 teaspoon flour. 2 egg yolks. 1 small can evaporated milk. 2 tablespoons margarine. Cook until thick enough to “spread between layers. Frosting Cream together at high speed one stick margarine, one three-ounce package of cream cheese, two squares melted chocolate and five or six tablespoons evaporated milk. Slowly add one box confectioners’ sugar. Spread four or five tablespoons of frosting on the filling be tween layers then frost top and sides of cake. Our Harmony artist in the kitchen shared her Holiday iFruit Cookies recipe with us. We haven’t tried it but they are bound to be good. ‘ Holiday Fruit' Cookies Vi cup shortening. 1 cup light brown sugar. 1 % cups flour. Vi teaspoon salt. Vi teaspoon soda. Vi cup sour milk. Vi cup each chopped dates, pecans and candied cherries. Cream together shortening, sugar and eggs. Sift fleur once before measuring. Sift ; together flour with salt and soda. Add alternately to creamed mixture with milk. Mix fruit and nuts with last addition of flour. Drop by teaspoonfuls on greased cook ie sheet and bake 10 minutes at 350 degrees. Just as traditional as co conut cake at the holiday season is eggnog. This easy to-fix eggnog drink calls for a pared down list of ingredi ents that insures convenience, economy and nutrition. This one is served warm like the ■Christmas punches of olden days and comes to us from the Pet Milk Company. Eggnog Punch 2 cans (13 oz.) Pet Evap orated Milk. 2 cups water. 4 eggs, slightly beaten. Vi cup sugar. 1 piece (1 inch) fresh or ange rind. 4 teaspoons rum flavoring or 1 cup rum. Mix evaporated milk, wa ter, eggs, sugar and orange rind in large saucepan. Stir over medium heat until steaming hot. Stir in rum flavoring. Serve warm top ped with whipped cream and nutmeg.
