Hie sharp cold facts of
winter have really been
getting to us within recent
weeks and just thinking
about a bowl of homemade
soup has a tendency to make
us feel warmer.
Soup can sustain us and it
helps prop up the budget.
Soup and a sandwich or
salad is regular wintertime
fare at our house for lunch
and just after vegetable
soup our regular luncheon
“guest” will opt for
homemade potato soup.
Quick onion soup is another
favorite but it requires a

HEARTY SOUP Homemade Sausage Soup is hearty enough for a supper main dish.
Just add a fresh fruit salad with applesauce and yogurt dressing for a satisfying meal. For

We like this idea for
Hearty Sausage Soup which
is designed to take less time
to prepare than some of the
other main dish soups. It has
a white sauce base. Chicken
broth, onion and oregano
add flavor with cooked
potatoes, lima beans and a
can of corn as vegetables.
Thinly sliced smoked
sausage takes only
moments to heat and
provides meatiness which
the menfolk like. This is an
economical soup because it
vestors already own more
than 195,710 acres of
property across the state.
He said purchases of land
by non-resident aliens add to
the problems of young North
Carolinians who want to
establish themselves as
farmers, and leave the state
economically vulnerable.
“There are plenty of
young men and women who
would like to farm, but who
can’t find adequate farm
land at a reasonable
price,” Scott said. “It’s
almost impossible for the
young farmer to get started
this day and time if he
doesn’t inherit a farm.”
Scott predicted that the
nation’s farms will soon be
as valuable to international
stability as Middle East oil
because a rising world
population will require an
ever increasing food supply.
He said at least 17 other
states have passed or
considered the passage of
legislation to ban or more
strictly control the sale of
land to foreign investors.
“If we find ourselves in a
food crisis, and don’t own
the land we need to grow the
food to feed our people,
where will that leave us?”
Scott asked. “The family
owned farm has proven to
be the most productive way
to use our farmland, and it is
is indeed a main dish with
its meat and potatoes, milk
and vegetables. Even the
bread and butter is fur
nished in the form of rye
croutons.
Only a salad is needed to
round out the menu. Most
economical would be to
select winter fruits such as
oranges, grapefruit and
bananas and arrange on
salad greens. For something
different in salad dressing
mix plain yogurt and ap
plesauce, add flavorings of
nutmeg and cinnamon and
serve with the fruit. Add
gingerbread with lemon
sauce for those who insist on
dessert.

Hearty Sausage Soap
with Rye Croutons
ft cup (ft stick) butter
ft cup chopped onion
3 tablespoons flour
ft teaspoon oregano
ft teaspoon salt
ft teaspoon pepper
4 cups milk
lft cups chicken broth
lft cups diced cooked
potatoes
1 pkg. (10 ok.) frozen lima
beans, cooked and drained
1 can (7 oz.) whole kernel
corn
8 oz. thinly sliced smoked
sausage
Melt butter in a four-quart
Dutch oven; saute onion
until tender, about 3
minutes. Stir in flour and
seasonings until smooth.
Remove from heat and
gradually stir in milk and
broth. Bring to boiling,
stirring constantly. Boil and
stir l minute. Add potatoes,
lima beans, corn and
sausage. Heat thoroughly.
Meanwhile, for croutons,
brush both sides of 6 slices
rye bread with butter. Place
on baking sheet. Bake 8 to 10
minutes in 400-degree oven.
Turn slices over and bake 8
to 10 minutes longer. Cut
bread into bite-size pieces.
To serve, ladle soup into
bowls. Sprinkle croutons
over top. Serve immediately.
Makes 10 cups.
Yogurt Applesauce
1 cup thick applesauce
1 carton (8 oz.) plain
yogurt
ft teaspoon nutmeg
ft teaspoon cinnamon
Combine applesauce,
yogurt, cinnamon and
nutmeg until well blended.

Onion Cheddar Soup
2 large Spanish onions
one-third cup finely
chopped celery
one-third cup finely
chopped carrot
ft cup butter or
margarine
2 tablespoons flour
6 cups well-seasoned beef
broth
ft teaspoon salt
Pepper to taste
lft cups grated sharp
Cheddar cheese
Peel and slice onions to
measure 4 to 5 cups. Saute
onion sliced celery and
carrot in butter ova low
heat, about 10 minutes or
until translucoit. Blend in
flour. Gradually add broth,
stirring until it reaches the
boiling point. Cover and
cook over low heat 10
minutes. Add salt, pepper
and cheese, stirring until
cheese is melted. Serve with

delicious accompaniment
for crisp bacon or savory
browned sausages for a
chilly winter supper.
Spanish Onion Pie
Combine ft cup melted
butter and 1 cup fine
cracker crumbs; press into
a nine-inch pie pan. Saute 2
cups thinly sliced Spanish
onion in 2 tablespoons
butter. Place in crumb shell.
Top with 2 eggs beaten with
three-fourths cup milk and
three-fourths teaspoon salt.
Sprinkle with grated
Cheddar cheese. Bake at 350
degrees for 30 minutes.
Makes 4 to 6 servings.

prunes with cottage cheese
for a delicious snack after
school or for evening TV
