Chewie is shy when he first meets you, but quickly warms up when toys are involved. He is a young, male lab mix. His sister Charlie also is with us waiting to find her forever home. Gloria, a boxer/bully mix, loves being around people. She’s an active girl. The Tri-County Animal Shelter and Adoption Center is on Icaria Road in Tyner and can be reached at 221-8514. Area has many good chefs T here are so many good cooks here in Edenton and the sur rounding counties. Virginia Wood makes a legendary shortbread heart cookie, and Kathy Keel’s chicken, wild rice and artichoke casserole recipe has passed through many hands. Donna Spivey’s Amish Cinnamon Friend ship Bread, which is sold at the Edenton Farmer’s Mar ket, was introduced to me by my friend Missie Har rell, and its name is very fit ting as it is delicious treat best shared by old and new friends! And the local talent isn’t just women. Bill Schulz, Ernie Knighton, John Ni cholls and Key Stage are well-known for putting out a great spread at many lo cal events and dinner par ties. Don, at The Captain’s Quarters, is known for his barbecue, as well as his wife Diane as an ac ¬ com plished chef. Another local tal ented chef, Les lie Lippen- cott, who is an in structor at the College of the Albe marle’s Edenton Campus Culinary Program, also of fers cooking classes in the summer for area residents. Many locals and guests who have attended my classes are excellent cooks like Nancy Downum, but it’s always fun to learn a new spin on an old tech nique or even to get to know your way around the kitchen for the first time. From beginner’s to expe rienced cook’s fare I have sampled some wonderful offerings that people have shared at dinner parties, supper clubs, cocktail parties, luncheons and re ceptions. Unfortunately many of these have been at funeral receptions which is such a sad venue for shar ing food but a comfort for the families and friends of so many special Edenton folks that have passed away. This past week I shared cookies at one such recep tion and had many requests for the recipe. Someone also shared this same cookie at a potluck at our Garden Club luncheon, so I know others may have made it, but I would like to share my version as it is a very quick and easy cookie, perfect for summer. This week I’ve included my recipe for Almond Bars. Eqjoy! I’m happy to answer any cooking questions and you can direct them to the Chowan Herald. Cheryl Orr is the owner of the Cotton Gin Inn. EDENTON EPICUREAN Almond Bars Makes 3 dozen INGREDIENTS 1 cup almond paste 1 cup unsalted butter, at room temperature 2 cups sugar 2 large eggs, at room temperature 1 teaspoon pure almond extract 2 1/4 cup all-purpose flour % teaspoon salt % cup slivered almonds 4 tablespoons sugar PREPARATION 1. Prepare a 13 x 9-inch baking pan with foil overlapping the sides and pressed into corners. Spray with nonstick cooking spray or lightly grease with soft butter. Preheat oven to 350 degrees. 2. In a large mixing bowl, cream the butter, al mond paste and 2 cups sugar until light and fluffy with a stand or hand mixer. 3. Beat in the eggs one at a time. Add the al mond extract. 4. Slowly add the combined flour and salt and until the mixture just comes together. 5. Spread into prepared baking pan. Sprinkle with remaining sugar and slivered almonds. SUBMITTED PHOTO Almond bars 6. Bake for 30-35 minutes until a toothpick in serted in the center comes out clean. Cool in the pan for 20 minutes. Gently lift cookies out using the over lapping foil and set on a rack to cool completely. Transfer foil lined cookies to a cutting board and cut into squares or rectangles. Store in the refrigerator in an air-tight container for up to a week or freeze. NOTICE OF SPECIAL SECOND PRIMARY ELECTION CHOWAN COUNTY, NORTH CAROLINA A special second primary election will be held on Tuesday, July 9, 2019 in Chowan County to vote in the following contest: U.S. House of Representatives, District 3 Republican candidates only. Absentee voting for medical reasons only is available. Requests for an absen tee ballot must be made in person on an absentee request form (available @ NCSBE.GOV and at the county board of elections office), and must be request ed and received in the office by 5:00 p.m. Monday, July 8, 2019 at the Chowan County Board of Elections office to get your absentee ballot in person for this election. Absentee voting requires the voter to complete the form on the ballot return envelope that must be witnessed by two qualified persons or a notary public. Completed absentee ballots must be returned in person to the Chowan County Board of Elections by 5:00 p.m. on Election Day (ballots can be received by mail after this time and will be timely if received within three business days and postmarked by Election Day). Voters may receive assistance voting a mail-in absentee ballot from a qualified person of their choice. Voters voting in person are entitled to assistance by an election official, or, if assistance is needed due to disability or illiteracy, by a qualified person of their choice. Voting sites are accessible to all voters. Curbside voting is available for voters who are not able to enter voting sites. All persons who are registered to vote as Republican or Unaffiliated that did not vote democrat in the April 30, 2019 Primary may vote in this election. Because this is a Second primary for the same office there will not be any same day reg istrations in one stop early voting allowed during the election. You needed to be registered as Unaffiliated or Republican on Tuesday, April 30, 2019 to vote in this election. Voters who were not registered in the county by April 30, 2019 will not be al lowed to vote during the second primary election with the exception of voters who recently moved into the county and are now qualified to vote here. Those voters can, by voting a Provisional ballot on election day in their home precinct, vote in this election. If you are told that you cannot vote in this election for any reason and wish to, you may vote a Provisional ballot at your polling place only on Election day and the eligibility of that ballot will be determined by the Board of Election. Polls will be open from 6:30 a.m. to 7:30 p.m. on the day of the election, Tues day, July 9, 2019.
