The following is a descriptive essay by Miss Mildred Hendrix. one of the 4-H club girls who is producing milk from throughbred Guernseys and happens to sell their total production to Coble Dairy products. She was one of the boys and girls from 28 coun ties receiving $5 for having the best essay from her county. In the accompanying pictures she is checking on accuracy and weighing of milk, taking proper samples of milk to be tested for butter fat content and the last and final an alysis is accuracy with which the final sample is tested. Others in the pictures are Miss Grace Ram sey and Miss Katherine Mintz of Coble Dairy Products, Inc. The essay follows: "When I visited the Coble Dairy plant in Murphy, I was greatly im pressed by the accuracy that was used in the weighing, sampling and testing of the milk. Everything was done in a very orderly way The trucks were backed up to the door, and the milk unloaded. As the cans came in. each patron's milk was weighed and the weight recorded I noticed that the weigh er was careful to let the hand on the scales drop back to zero before weighing the next patron's milk. In this way she was sure to get an accurate weight. Alter weighing, the milk was poured into a large vat and thor 1 oughly mixed. Then a sample was I taken, using a small dipper and sampling bottle in which a small amount of a eorrosvie sublimate had been placed as a preservative After the daily sample of milk was added, the contents of the bottle was shaken well I was told that unless this was done regularly every day the cream that rose I would become tough, making it ' impossible to get a proper sample for testing. I "The bottles were then tightlv covered and stored in a cool place until the butterfat tests were taken "In testing for the fat in the milk the Babcock test was used. By means of a pipette markek 17.6 ml. 18 grams of sample was transfer red to the milk test bottle which had previously been cooled to a temperature of 65 F. and was thoroughly mixed. 17.5 ml. of sul phuric acid was added, mixed and transferred to the tester, counter balanced and whirled for two min utes. Hot water was again added until the fat was brought within the scale on the bottle neck. It was then whirled for one minute, placed in a water bath and kept for five minutes at a temperature of 130- to 140? F. Then the bottle was removed, wiped .and with the aid of a pair of dividers was meas ured and read in terms of percent age. By using this method of test ing complete acuracy was assured. "I think if all patrons would visit the plant and watch the care with which their milk is weighed, samp led and tested, there would be no complaints and there would be the best of understanding between pat rons and Coble Dairy Products."
