Ham and cheese, always
a Kood combination reach an
epicurean pinnacle when they
are put together to make
a French tart. This Quiche
Lorraine is made with real
mayonnaise which not only
enhances the flavor but con
tributes important polyun
saturates that help counter
balance the saturated fat of
the cheese and eggs. Serve
the Quiche as an appetizer
or as a lunch or supper main
dish.
Quiche Lorraine
1 unbaked 9-inch pastry shell
H cup Hellmann's or Best
Foods real mayonnaise
Vfc cup milk
2 eggs
1 tablespoon corn starch
1 cups (about V4 pound )
cubed cooked ham
ltt cups (about 'A pound)
chopped Swiss cheese
13 cup sliced green onion
Dash pepper
Mix together real mayonnaise,
milk, eggs and corn starch
until smooth. Stir in ham,
cneese, onion anu
Turn into pastry shell. Bake
in S50F. oven 35 to 40 min
utes or until golden brown
on top and knife inserted in
center comes out clean. Makes
6 to 8 main dish servings or
10 to 1 2 appetizer servings.

into Flaming Pepper Burgers and
set ihem ablae with bourbon just
before thev're served.
FLAMING PEPPER BURGERS
1 lb. ground beef

1 teaspoon instant minced onion
I teaspoon salt
1 tablespoon coarsely cracked
black peppercorns
2 tablespoons butter f
1 4 cup chopped parsley
2 tablespoons lemon Juice
1 tablespoon Worcestershire sauce
2 tablespoons bourbon, warmed
Combine beef, egg, onion and
salt. Shape into 4 patties. Sprinkle
both sides of each with cracked
pepper put peppercorns in small
bag and smash with mallet or
rolling pin . Press very lightly into
burgers. Let stand about IS
minutes. Sprinkle bottom of a
bean skillet wkh salt and let It get
very hot. Cook hamburgers about 3
minutes each side for medium rare.
Reduce beat or move skillet to a
cooler part of the grill! and add
batter, parsley, lemon juice and
Worcestershire sauce. When
heated through, ignite bourbon and
pour over. Serve when names
subside, spooning pan juices over.
Makes 4 servings.
