MINORITY HEALTH INTERNS CHAPEL HILL - The American College of Hospi-' tal Administrators (ACHA), based' in Chicago, 111., has announced the establishment vof a summer intern program lor minority students titlea tne "Albert W. Dent Work-Study Fellowship." The program is designed to address the' issue of minority involvement in the health administration field. Dent is president emeritus of Dillard University A New Orleans, La., and was the first black administrator in ACHA. Announcement of the fellowship in North Carolina was made this week by the N. C. Health Manpower Develop ment Program (NCHMDP) in . Chapel. NCHMDP, an inter institutional program of the University of North Carolina system that was organized in response to the acute need for more minority and dis advantage health professionals in North Carolina, will serve as the contact agency in the state for students interested in the fellowship. The Dent Fellowship, which ' carries a stipend of "$3',QO0,!ws launched s a result of a 1973 ACHA task force on minorities. Findings of the task force showed a great need to correct the underrepresenta- tion of minorities in health administration positions. ' Candidates for the fellow ship must : - Complete a summer in ternship as a participant in the National Work Study Program administered by the Associa tion of University Programs in Health Administration and the National Association of Health Service Executives. - Be a student in good standing in an acceptable undergraduate or graduate pro gram in health or hospital ad ministration. Students in undergraduate programs must show proof of acceptance in the fall term in a graduate school in hospital or health service administration. - Produce two letters of endorsement from persons who. will attest to the potential and sincerity of the candidate to pursue his or her career goals. - Be able to relocate in Chicago for the 11 week in ternship from June 13 to Aug. 26. Although the dessert looks fancy,' it's simple and quick to fix, Apple-Mince Cobbler Swirls . 2 cups flour ' 1 Tablespoon baking powder 14 teaspoon salt 1 3 cup butter or margarine 34 cup milk 2 cups prepared mincemeat 1-12 cups chopped apple - ' 23 cup water , ' 7 14 cup unsulphured molasses 34 cup sugar 3 Tablespoons butter or margarine 1 Tablespoon lemon juice' 1 Mix together flour, baking powder, and salt. Using pastry blender or two forks, cut in butter until mixture resembles co'rnmeal. Add milk; mix lightly to form a soft dough. On lightly-floured surface, roll dough into a 9x1 5-inch rec tangle. Spread with mince meat and chopped apple. Roll up like a jellyroll. Cut into 15 one-inch sections. Arrange rolls, cut-side up, into a 9x13 inch pan. Bake at 400F. for 10 minutes; prepare syrup during this time: Combine water, molasses, sugar, butter, and lemon juice in saucepan. Heat until almost' boiling. Carefully pour hot syrup over tolls. Reduce oven heat to 350F. and, continue to bake for 30 minutes more, :V Let rolls stand 15-26 min utes to allow syrup on bottom of pan to thicken slightly. Serve warm with plain cream, ice cream or whipped cream. 15 servings.
