A winning 42-pound Colby cheese recently was sold to the highest, bidder at auction for $2,940 or $70 a pound. That's about $67 pound more than con sumers pay for top quali ty American cheese at their grocery stores. The cheese makers craft is one of pride that has developed over many centuries, but the modern cheese plant is a lot different than it was not too many years ago. George Fry, chief of the U.S. Department of Agriculture's inspection and grading service for dairy products a unit of USDA's Agricultural Marketing Service says automation and com puter control are playing major roles in modern cheese plants. "This," he says, "makes possible more continuous production of cheese and a leveling out of quality at a higher standard." What's the difference between the past and the present? Fry describes it this way: "Much more labor was needed in the past. The workers activated switches to pump milk into a vat, manipulated the temperature by ad justing steam in the jacket around the vat, added starter and rennet to make the cheese gel, and manually handled the slabs of cheese dur ing the cheddering, mill ing and hoop Filling operations. 10-LB.
