Trade o "Domestic Dried Fruit," within a few years, Jjas grown to a vast magnitude, and now enters . into the business calculations of almost every Jarmeraod merchant in the entire country. . Prior. to. the late war, the South, particularly the States of Virginia, Jforth Carolina, Tennes . .ee, and Northern. Georgia, were the principal .sources of supply, of' what is termed in the ' iarge markets, 4JSouthern fruit." Qwing to the general prostration of all business interests ibrough the South, caused .by the war, the far mers and producers in almost every Southern jState are now turning their ,. attention to the business oi drying fruit, as a source of income, for the purpose of informing every one engaged in this business, as to the best method of pre paring tbeir fruit for market to make it most saleable, and to, bring the highest prices, the following suggestions are made: First in re gard to i PiAcnis. Whether peaches are pealed or pnpealcd, do,o't wait for tie fruit to become perfectly ripe and mellow, because in this case, , ibey will dry dark in color, and while a ripe paacb-is -intrinsically better than a hard one yet jtbe demand amoDgthc buyers is universally for bright colored peaches, whether pared cr. un bared. And in regard to pared peaches, not only is bright color essential for ready sale at bighest prices, but they should be cut as fine as a little care and patience will allow. Instead fit cutting a pared peach into halves or quarters, by cuttiog it into ten or fifteen "quarters," and takiog pains in regard to proper ripeness of the fruit it will dry quicker, and be made far more saleable. ' To draw a comparison between the pared peaches of the Eastern Shore oi Virginia and Georgia, (in both of which States they pre pare bright and fine cut pared peaches,) with jtbe pared peaches of North Carolina and Ten nessee, from which States the pared peaches generally come to market coarse cut and dried from peaches too ripe, it is only necessary to state that for the last two yeais, Virginia and Georgia pared peaches have brought prices one third higher than has been realized for North Carolina or Tennessee pared peaches. All this can be obviated by care and pains. The rule of color will apply to unpared peaches a3 well as to pared, but is reversed entirely in regard to put. Unpared peaches dried in halves, sell much better than when mixed with quarters, pr when entirely quarters. The differenc? oi price ranges from year to year, an average of fully two cents per pound more for all halves, than for mixed, or quarters. Caie should be (taken in drying unpared peaches, to select fine Jarge fruit, as the demand always runs for large bright halves. If dried in kilns or ovens, don't let them get burned, and in packing for market let tbem get thoroughly cool and dry before shipping. Don't mix different qualities in the same package, as it is always discovered, and the Eale will be based upon the poorest quality la the barrel or sack. 'ApquT Dried Apples Select good sound fruit not ripe to mellowness. Pare them clean, take the cores entirely out, and cut in as fine slices as : alienee and labor will allow. Be very careful in thorooghly drying them of a bright color, and the difference in price obtained over the ordinary rough cut, daik-colorcd, and not well cored apples, will more than pay for the ime and trouble of so doing. -You can't make a bright Colored dried apple or peach out of mellow ripe fruit, and the bright colored fruit will always out-sell the dark. Blackberries Have become a great sta ple. They should be thoroughly dried (not burned) beiore packed for market. If packed too soon they breed worms, become mouldy, and eventually worthless. A good many barrels pf last season's crop perished entirely by being packed too green, and a number of these un merchantable barrels having accidently been shipped to far Northwestern markets, the fact of their bad condition has had a prejudicial ef fect on Southern blackberries, which great care 'in drying and packing this year will overcome.
