I Two Holiday Flavors - One Lovely Pie
The rl?h, dark colors of cranberries and mincemeat blend
under this flaky, lattice crust for a visual dessert treat.
Simply combine prepared, whole cranberry sauce and mince
meat with brown sugar and grated orange rind to make this
sweet-tart filling wlth'a holldayalr. If you want to gild the lily,
serve with a hard sauce. Easy, quick, but memorably delicious!
CRANBERRY-MINCE PIE
one 9-lnch pie
2 cups silted enriched flour*
1 teaspoon salt
2/3 cup shortening
4 to 6 tablespoons cold
water
Cranberry-Mince. Filling
Sift together flour* and salt into mixing bowl. Cut In shortening
until pieces are slzte of small peas. Sprinkle with water, a little
at a time, mixing, lightly until dough begins to stick together.
Turn out onto lightly floured board or pastry cloth and press to
gether; divide In half. Roll out half. of dough to circle l/8-lnch
thick; fit gently Into 9-lnch pie pan. Trim pastry even with rim
of pan. Roll out remaining dough for top crust. Pour Cran
berry-Mlnce Filling Into pastry shell; moisten edge of pastry.
Arrange top pastry over filling; seal edge. Bake In preheated
425 degrees oven, 35 to 40 minutes, or_untll lightly browned.
Cool on wire rack. ,
CRANBERRY-MINCfi FILLING
1 1-pound can whole cran
berry sauce
1 2/3 cups mincemeat
1/4 cup brown sugar
1 1/2 teaspoonsLferated
orange rind >
Combine all Ingredients and mix thoroughly.
?If you don't sift and In absence of other directions, spoon
flour directly from container Into aone-cupdry measure, level
off, then remove two tablespoonfuls according to US DA recom
mendations.
NOTE: If self-rising flour Is used, omit salt.

enactment of Christ's birth
with a creche or Nativity

Mary, Joseph, and shepherds.
Live animals were used, and a
life-sized wax figure of the
Christ Child was placed In the
manger.
Christmas carols can also be
traced back to St. Francis.
Originally a "carol" signi
fied a dance rather than a
song, and It was St. Francis
who led the villagers In Joy
ous dancing around the Nati
vity Scene.

toms, the exchanging of
Christmas, cards, began In
England In, the 1840's. Christ
mas card# were first Intro-;
duced In the United States by
Louis Prang, a German Immi
grant who settled In Roxbury,
Massachusetts. Often called
the "Father of the American
Christmas Card," Prang
printed his (Irst "Seasons
Greeting" In 1873.
