As this is just the time when oystern
aro at their test the following recipe for
making oyster soup will be of interest to
housekeepers: , )
Two quarts of oysters, three pints of
new milt, three ounces of butter, ene
acd one-half ounces of flour, salt and
pepper to taste, arid mace, if liked. Put
the milk over boiling water; drain !the
oysters and put the liquor in a saucepan
ou the stove; wash the oyptt ra and re
move every .article of shell that may ad
here to them. When tht milk is hot add
the butter and; flour, rubbed smoothly
together and tHinned .with a little of the
milk, let it cook, stirring slowly, until
slightly thickened; the liquor, which
must be well boiled, .skimmed and' hot,
may then be added, and after that the
drained oysters. As soon as they are
well puffed and the edges somewhat" curl
ed serve the soup. Haifa pint of rich
cam is a great improvement and may be
used instead; c f the butter. Serve with
tbem a plate of small crackers, crisped in
the oven. i
