Campus Capers Kemember tne famous bla ck U.S. Botanist and educator George Washington Carver? Of course you do, for how can any black forget his great contributions to science. He is widely famous for his agricultural research and lat er discovery of over a hundred uses of the by-products of peanuts. Why, he originated peanut butter, oil, soap pro ducts and much, much more. But, our friend Dr. Carver somehow overlooked peanut drink, and this is where Smith comes into the picture. Dr. Huey Rowe-Anderson, the Chemistry-Physics Pro fessor at Johnson C. Smith University, is engaged in the production of a drink that may quite soon be found on the market, peanut drink. He is co-working on this product wiin Aivin Midgette, a Char lottean who is the head of the Creative Enterprise and As sociates and the originator of the idea of peanut drink. Dr. Rowe-Anderson com ments that his involvement in the making of the product came when the originator was in need of a chemist to study the chemical aspects and the stability of the drink. Through his research he found that the original drink had defaults of spoilage. He informed that they could not add a preserva tive to decrease the spoilage rate because of the chance of affecting the ingredient itself. Thus many trials were made to perfect the drink without destroying the pleasant taste. They came up with a new 1 forum la with a new base. The present forum la adds up to a drink having the potential as a non-alcoholic nutritional beverage, and as an ingredient in a cocktail drink. It has a light, brownish color with a sweet, peanutty taste. However, tne drink has colloidal suspension proper ties, meaning that it is not a true liquid for it possesses tiny bits of peanut particles. How ever, Dr. Rowe-Anderson sta tes that "if one would have a true liquid solution, the sub stance would be greatly affec ted. And besides, the small bits of peanuts add to the delightful taste." Final tests in stability of the drink have not been com pieieu. in oruer ior 11 10 re a non-alcoholic beverage it must meet conformity re quirements of the Food and — Drug Administration, and a complete analysis takes an excellent sum of money. There are already interests for the drink to be used as a cocktail mixture, but it must be invested in the market. The drink is rich in protein and may serve as the chief source of protein drink for children in underpriveleged areas who can not afford milk. It was served at one of President Jimmy Carter's In augural Balls in Washington, D.C. And if the President (the peanut pro himself) loved it, I'm sure it will be replacing milk or fruit juices in many of our food stores. Ο. J.
