Five time as much wheat and six times as muen corn were exported last month as in December, 19K1. Exports of flour were OS per cent higher; of fresh beef, 1200 per cent higher. Other staple food products increased, on the average, about 500 per cent. Wher is up near $1.50 per bushel, although onr crop was an immense one. Composition The white of the egg is made up principally of albumen and water. The yolk contains not only protein, but fat of a very assimilable nature. Yolks of eggs are especially rich in the quality of the mineral matter, al so. These are phosphorus, iron, calci um, potassium and tnangnesiura lit the form of salts and other chemical compounds. The latter foods are nec essary in making the chemical chang es of the body, if health is to be main thined. They are also necessary for the development and growth of the bony structure of the child's body. Because of this fact, and the large percentage of protein and assimilable fat in the yolks of rgc.s, these are valuable fo.,:l, especially for children and cnaemic people.
