R. Niswonger, extension hor ticulturist at State college, urges orchardists to prepare storage places where they Can keep a part of their crop for the late market. When kept in well Ventilated . storage where the temperature is between 32 and 40 degrees fahren heit, apples, particularly the late varieties, will be in good condition in January. Let the fruit cool off as much as possible before putting it in the storage room,. Niswonger said. Warm apples are likely to sweat and lose their keeping qualities if put directly into storage. ; ; Grade the apples and put them in barrels, boxes, or loose-slatted crates. The containers should be stacked in such a way that the regular floor will 'improve circula tion. , Any means of insulating the store room to keep the apples cool on warm days and to' protect them from freezing in cold weather will add to the value of the storage place, Niswonger continued. The roof especially should be well insulated, as much heat can leak in or out through' a thin, careless ly built roof. This is a factor often overlooked in converting the cellar of a house into a store room, Niswonger added. Ticking should be delayed as long as the fruit is holding on to the tree well or until there is dang er of freezing, cautioned Niswonger. Offers Recipe For Making Damson Jam Delicious jam can be made from the damsons ripening over North Carolina, according to Mrs. C. Morris, State college extension economist in food conservation. She offers a few suggestions for the farm housewife who would like to convert some of her damsons in to jam : Wash the fruit and pick off the stems. To remove seeds, place a small quantity of damsons in a colander and lower into hot water. Allow them'to heat'slowly. Press out the seeds and remove. Keep water over a slow fire until all are seeded. At least three-fourths of the fruit should be fully ripe to give the jam good flavor and color. One-fourth, should be slightly under ripe to give the finished product a good consistency. Use three-fourths pound of sugar for each pound of fruit. Put fruit and sugar into a preserving kettle with just enough water to prevent burning. Mash the sugar and fruit with a wooden spo.on or bat. Cook slowly until the fruit becomes a smooth, thick mass. The temperature of the jam when finished will range from '221 to 225 ''egrees fahrenheit, or 105 to 106 degrees centigrade, depending upon the condition of the fruit used.
