It Wouldn't Be Christmas Without Homemade Cookies, Candies - So Make These Christmas wouldn't be Christ mas without homemade cookies and candies. Mrs. Carl Slagle, charter mem ber of the Macon County Home Demonstration Clubs, has shared ^ayerfully, joyfully, we greet Christmas May the Christ Child's message of love and hope gladden your heart and enrich your life. Roy, Johnny, Bill, Roger, Hugh, Farrell and the Boys at the Winn-Dixie 0* e whose birth we celebrate brought to earth the gifts of love and peace, understanding and good will. May all these great gifts be yours. Martin Electric Co. her good recipes over the years with homemakers. This Christmas, Mrs. Slagle is sharing three of her favorites. These were used by Miss Lucy Slagle, home economist of the Atlanta Gas Company, on her television program recently. Miss j Slagle is a native of Macon Coun ty. Orange Sugared Nuts , 1 1 1/2 cups sugar cup water I '4 cup orange juice lfo teaspoon grated orange rind 2V2 cups nut meats Combine sugar, water, and orange juice and cook to soft ball stage (238 degrees). Remove from heat. Add orange rind. Stir until syrup begins to look cloudy. Quickly stir in nuts. Turn onto greased baking sheet. Separate nuts with two forks. Nut-Mallow Fudge % lb. (about 48i marshmallows ',4 cup butter 1 tablespoon water V* teaspoon salt 1 cup semi-sweet chocolate bits 1 teaspoon vanilla 1 cup chopped nuts Combine marshmallows, butter, water, and salt. Melt over low heat. Bring to boil and boil for one minute, stirring constantly. Remove from heat. Add chocolate bits and stir until smooth. Fold in vanilla and nuts. Pour into greased pans. Add nuts and cool. Cream butter: add sugar, vanil la, and egg; beat until light. Add sifted dry ingredients, and mix well. Chill until firm enough to roll. Halve dough; roll each half on floured waxed paper, into a 12 x 9 inch rectangle. Spread with filling; roll up tightly from end. Wrap in paper. Chill overnight. Slice '/? inch tfiick. Bake on light ly greased cookie sheet in 375 de gree oven for about 10 minutes. Makes about six dozen cookies. Mrs. Stanley Penland Lemon Mardi Gras Squares Sift together: 1 Vi cups sifted flour i/2 teaspoon salt y4 teaspoon baking powder Beat: 3 egg whites until soft mounds begin to form. Add 1 cup sifted confectioners, sugar gradu ally, beating well after each ad dition. Continue beating until stiff, straight peaks are formed when beater is raised. Cream: / i/2 cup butter 1 cup sugar Add: 3 egg yolks, one at a time. Beat for 1 minute. Measure: >/3 cup lemon juice. Add alternately with dry ingredi ents to creamed mixture, begin ning and ending with dry Ingre dients. Blend thoroughly after each addition: ? Add 2 tablespoons grated lem ond rind . i/2 cup pecans, chopped. Mix | well Fold in: beaten egg whites gent- j ly but thoroughly. Pour: Into well greased and | lightly floured 13 x 9 x 2 inch j P Bake: in moderately hot oven (400 degrees) 25 to 30 minutes. Frost while warm: sprinkle with '/4 cup chopped pecans. For frosting : Cream 2 table- , spoons butter or margarine. Blend in 1 cup sifted confectioners sugar alternately with 1 tablespoon cream. Beat until creamy. Mrs. Bill Bryson Norwegian Butter Cookies I 1 cup butter '/2 cup powdered sugar 2 cups sifted flour 1/2 teaspoon salt y3 CUp ground unblanched ai mbnds. Candied peel Cream butter; add sugar; beat until light. Add sifted dry ingredi ents gradually; mix well. Work j In nuts. Chill overnltht. Shape Into Vi-lnch balls; garnish with candled peel (lemon, orange, or grapefruit). Cut peel In small dia mond-shaped pieces. Bake In mod erate oven (350 degrees) about 10 minutes. Mrs. Dolye Blaine Cookies From Cake Mix Plain cookies: To one regular size package of any of the cake mixes listed below add 3 unbeat en eggs and 3 tablespoons cook ing oil. Beat at low speed of elec tric mixer or with wooden spoon Just enough to blend. Drop dough from teaspoon onto greased cookie sheets. Bake in moderate oven. 375 degrees P., 10 to 12 minutes. Remove at once to cake racks. Each package will make 4 to 5 dozen cookies. Honey Spice: Add Vi cup chop ped nuts or coconut to dough. Orange: Drop dough, and sprin kle with flake coconut. Yellow: Add 'A teaspoon nut meg and 1 teaspoon caraway seed to dough. Peanut Delight: Shape dough into small balls, and roll in coarse ly chopped unsalted peanuts. O.' add % cup chopped peanuts tc dough. Apple Chip: Add '/2 cup each chopped seeded raisins, dates, and nuts to dough. Mrs. J. L. West, Jr. Lemon Coconut Crisps 1 package Lemon Flake cake mix 2 tablespoons water 1 egg. unbeaten V* cup butter xk cup flaked coconut Spoon about 'i cake mix into mixing bowl, add water, egg, and butter. Blend well. Add remaining mix. and beat until smooth. Stir in coconut. Drop by teaspoons on greased baking sheets and bak'.' at 375 degrees about 12 minutes. Makes about 4 dozen cookies. Mrs. Florence Sherri'.l Honey Drops !4 cup fat % cup honey 1 egg 1 cup rolled oats 1 tablespoon milk 1 cup sifted , flour 3 teaspoons baking powder ',2 teaspoon salt V2 teaspoon cinnamon V* cup chopped raisins Cream fat and honey togethen. Add egg and beat until blended. Stir in rolled oats and milk. Sift together dry ingredients, add with raisins and mix well. Drop from teaspoon onto greased baking sheet. Bake in a moderately hot oven (400 degrees) 18 to 20 min utes. Yield: 2 % dozen. Mrs. Jessie D. Cabe Ginger Christmas Cookies y2 cup soft shortening % cup brown sugar | 2 eggs % cup molasses 3 cups sifted flour 1 teaspoon soda % teaspoon salt 2 teaspoons ground ginger 1 teaspoon ground cinnamon ( 1 ) Cream shortening and sugar. (2) Add eggs and molasses and beat with rotary beater until smooth. (3) Sift dry ingredients togeth er and work into shortening mix ture. <4) Chill dough 3 to 4 hours. (5) Remove half the dough from the refrigerator and roll out on lightly floured board Vt inch thick. , (6) Cut with desired plain or fancy cutters.
