(PRACTICAL POULTRY COLUMN. Mr. Editor:- As the Christmas festivities are drawing near, it calls to my mind my boyhood days some 30 years ago, when mother always instruct ed me to get the turkeys fat and ready for the market. I wish to say a few words about the different breeds of the majestic fowl. In olden days, the only season that there was any demand for the fowls -was at Xmas. Now there is a de mand for them at all seasons. "The pig of the poultry yard ' brings delight to every guest at all feasts. There are six standard varieties grown in this country, viz: Bronze Naraguisett, Buff, S'ate, White and Black. The principle differ ence is in the size and color of plumage. the Bronze and the Naragausett are the largest, the .Buff and Slate the medium, the . Black and White the smallest. There has been so much improve ment in the Wlrte that they are contending for another position as to weight, some of them having passed the 30 lb. mark. I raised the Naragansett breed for a number of years; the standard weight oi this variety is from 20 to 30 lbs for the males. It is not Unusual for male to weigh over 40 lbs., be ing too heavy for the ordinary mar ket. They are great foragers, very often wandering to such a distance that they would not return at night. In April, 1907, I concluded to try the vyhite turkey. In America the white variety is called the white Holland in the English poultry books, they are referred to as Austrian Whites in some Egyptian countries as the sacred turkey. They have been known in England for over one hundred >ears, but are a compara tively new bjefd in this country. It is considered the ideal fowl for a persou with a limited range, for it bears confinement well. I caunot ay this for any other breed. They show a vitality equal toother varie ties and are no more difficult to raise. This year I raised every one that I had hatched, and with less trouble. The fusual .weight of these fowls for the hens, is from 10 to 14 lbs. for the .males, from 15 to 26 lbs. according to the age. In color of plumage, they are {m're snow white, except each has a black beard, the toes and shanks being a pinkish white. From experience, I know that one cannot select a better breed than the White Holl and. They grow to the piost pro fitable size for the table, and when dressed correctly, present an at tractive appearance to the buyfcr.
