1-2 cup grated cheese
Line the bottom of a greased, rec
tungulai baking dish -with tspaia
gus Break the eggs over the aspar
agus, being careful to keep the yolks
whole. Sprinkle with grated cheese
and paprika. A few strips of pimen
to may be added to give color. Tem
perature 375*; baking time, 15 min
utes
Pink Bunny
Melt 2 tbsp. butter. Add 2 tbsp
flour that have been mixed with 1-2
tsp. dry mustard, 1-2 tsp. salt, and
1-4 tsp. pepper When blended add
3-4 cup milk and 3-4 cup tomato
soup that has had 1-8 tsp. soda add
ed to it. Stir in 1 cup of cheese that
has been cut fine When melted, add
1! beaten eggs and cook until thick
Serve hot on Uneeda crackers
Fish Souffle
2 tbsp butter
2 tbsp flour
1-2 tsp. pepper
1 1-2 cups milk
1 tsp. salt
1 tbsp minced parsley
1 large can fish flakes, or salmon
1 tsp. grated onion
| 3 eggs
Make a white sauce of the fat,
flour, pepper and salt Add to this
the onions, parsley, arid fish flakes,
the latter picked apart with a fork
Beat egg yolks until light. IherTadd"
to this mixture Fold in stiffly-beat
en egg whites. Pile in buttered cas
seiole. Temperature 350"-375"; bak
ing time 45 to 60 minutes
Creamed Tuna
Melt 4 tbsp butter, add 4 tbsp
Hour and blend. Stir in two cups
milk and cook until thick, season
with 1-2 tsp salt and 1-4 tsp pep
per Add 1 can tuna fish that has
been broken not too small Add I
tup of green peas and 1 tbsp pimen
to if desired. Serve hot on toast ot

Seafood a la Newburg (Serves 6-8>
1-4 cup butter.
5 tbsp. flour
2 1 -2 cups milk
3 egg yolks
Salt and pepper
I tbsp sherry, if desired
Melt butter, add floor and en-am
Cook on low heat on surface unit
until thick. Add 2 cups of mixed
| seafoods (shrimp, lobster or crab
meat). Add egg yolks and sherry
and heat slightly again on low heal
Pour mixture into baking shells or
in well greased baking pun. Sprin
kle top with butler and bread
crumbs. Bake in a cold or preheat
ed oven Temperature 375*. time 45
minutes.
Cheese Souffle With Mushroom
Sauce
4 tbsp butter
6 tbsp. flour
1 tsp. salt
lew grains Cayenne pepper
2 cups milk
I - cup grated New York cheese
Yolks nf 3 eggs
Whites of 3 eggs
Melt butter, on low or quarter
heat, add flour and add gradually
the heated milk. Follow with salt,
pepper, cheese and egg yolks Beat
whites dry and stiff and fold into
I mixture. Turn into buttered casser

Temperature 300", time 45 minutes.

Victim Of Accident Is
Home From Hospital
?
Jimmie Mitchell, local lad who
was critically hurt in an automobile
bicycle accident on Williamston's
main street three weeks ago, re
turned home from a Washington
hospital early last Sunday evening
Suffering a severe skull fracture,
the boy will have to continue in bed
for possibly two or three more
weeks. His condition is improving
rapidly, however, and he is expected
to be all right within about a month.
