' Land?cape Architect Hal tin Leader * School*!n County Mr. John Harris, Extension Land scape Architect from State College, was in .the county Thursday to con duct the first leader's school in the Home Beautification project with home demonstration club women. There were fifteen in attendance at the meeting. Slides in color, show ing homes before planting and after planting, made the meeting more interesting. Mr. Harris began work in the lower end of the county, as sisting peaple in correctly planting shrubs for their grounds Eight Home Demonstration clubs prepared 25 Christmas bags of fruit, candy and nuts for distribution at the County Home Old Christmas. Rev. John Goff conducted a service at five o'clock Sunday afternoon. Club members were represented from three clubs at the service and assisted in giving out the bags im mediately after the service. TYie county extension agents are in Raleigh attending the annual agents' meeting this week. Special Program For Club Meeting Tomorrow A special program has been ar ranged tor the meeting of the Wo man club here Wednesday, Janu ary 10th. Home Service Director, Virginia Electric And Power Company r The glorious hnlirlay season with its festive hoard of rich foods is closed and the home maker is inter ested in giving her family the whole some nourishing meals needed to carry them through the cold winter months. Breakfast is important and should not be eaten too hastily. A good breakfast is a fine slart for a suc cessful day We are apt to think of -tht* mr-al m terms of fruit juice, con, eggs, toast and coffee. This menu should be varied and tempt ing. Rice is a splendid source of ener gy and is one of the foods which is easily reheated and which does not change flavor when reheated. Serve it hot with cream and sugar I or work it into many sorts of deli-_ cious breakfast dishes such as pan cakes, muffins, fritters, or omelets such as: Kite rancjucs 1 cup warm boiled Rice 1 cup milk 2 eggs 2 teaspoons baking powder 1-2 teaspoon salt 2 tablespoons melted butter 1-2 cup flour ?Combine rite, Salt, miJk, putter and egg yolks. Stir in sifted flour and baking powder. Fold in stiffly beaten egg whites. Bake on hot greased griddle. Yield. 28 3-inch cakes. Rice Muffins 1 cup boiled rice ?m. 3 teaspoons baking powder 1 cup milk 5 tablepsoons melted shortening 1 1-2 cups flour 2 teaspoons sugar Beat well the rice, milk, beaten eggs, shortening. Sift flour, sugar. suit, and baking powder into buttei Mix only enough to combine. Bake in greased muffin puns. Yield: 12 average size muffins. Temperature: 400 degrees F. Time: 25 minutes Creamed Rice with Kg** Au (iratin 3 cups hot boiled rice 0 eggs 1 1-2 cups medium white sauce 1-2 cup grated cheese Combine the rice and white sauce. Place a one-half inch layer of cream ed rice in a buttered shallow oven dish or individual ramekin. Make slight hollows in the rice. Break an egg into each hollow. Season. Cuv er with grated cheese Bake until the eggs are set. Yield: 6 servings. Temperature: 350 degrees F. Time: 25 minutes. Make a sauce with the milk, flour and salt. Heat the rice in the sauce and add to the egg yolks. Fold in the well beaten whites of the eggs. Have ready and hot a skillet containing the fat, and pour the egg mixture into the pan. Heat the omelet slowly and move the pan about so the omelet will cook around the edge at the same rate as in the center, as soon as the omelet has | browned lightly on the bottom and sides and set, place in a moderate oven for fiv.e to ten minutes. When the omelet is done, crease it through the center. Fold over and serve im mediately.
