But what shall we serve on them? First, let us consider the hors d'oeuvres or appetiser tray. Those gay affairs on which tempting tid bits. hot or cold, are fastened by means of colored toothpicks. In the planning of the hors d'oeuvres tray, as in planning the; dinner menus, contrast in flavor, color and consistency are important factors. The variety may be large or small. If the hostess is alone in preparing and serving she will do well to specialize in two or three appetizers, making them especially savory. If she has plenty of time and assistance, too, she may like a more elaborate service. The following suggestions are of a varied nature. Some are for tooth pick appetizers, others for canapes and still others for supper snacks that will be nice to serve for porch suppers and the like. Hors d'Oeuvres Suggestions On a platter or small tray arrange a border of large perfect strawber ries and tips of fresh pineapple. Pile powdered sugar in the center. Serve very cold. The berries should be well washed but not hulled. The pineapple tips are prepared by cut ting around each "eye" of the fresh pineapple with an apple corer. Wash aridTiull large strawberries. Slit the tip of each and into it in sert a wedge-shaped piece of pine apple which has been sweetened. Fasten on a toothpick and insert it into a holder. (Use frozen straw berries if fresh are not available.) Cut spicy American Cheese in small cubes and fasten on tooth picks Willi Shiall sweet gherkins. j Skewer cooked cocktail sausages on toothpicks between slices or pieces of breed and butter pickle. Remove the viscera from large fat shrimp, marinate in French dressing. Drain, fasten on toothpicks and arrange around a bowl of sea soned and rather tart mayonnaise. Wrap almond-stuffed olives in small pieces of bacon, fastening the bacon in place with toothpicks. Broil until bacon is crisp. Remove from broiler, insert fresh toothpicks if original ones are burned and serve hot. Stuffed celery and celery curls are a good addition to the appetiz er tray. For a very flavorful stuff ing, work cream cheese with cream until of easy spreading consistency. Pack lightly into celery stalks, fill ing them only a little more than half full. Make a groove down the center and in it put caviar; sprinkle caviar with a small amount of lem on juice, cover with cheese and serve very cold. Peanut butter, thinned somewhat with cream or a tart cooked dressing makes a popular filling. Leave for Myrtle Beach Messrs. C. B. Leggett. J. Paul!
