The eye "eats" first, and those of us whose responsibility it U> iu ItTU Hit family have long realized the ne cessity of serving food that urges the appetite just in looking at it. Tj|f idea of garnishing food is not new, but the garnishes ? like the best menus, become drab and unin teres ting and lose their value when they ToT Miss Allgood low a Pattern. Frequently they are forgotten, espec ially on days when company is-not expected. But it is a bit of a prob lem to find new, unusual, yet prac tical garnishes for foods. Perhaps in the following list you will find some suggestions for garnishes that will be new to your family. For Soups Sprinkle a few grains of puffed I wheat or puffed rice in clear or | cream soup. Cut cold, cooked cereal in 1-4 inch I cubes and fry in deep fat. Serve in | place of croutons. Cut thin slices of cooked, left over I frankfurters and serve in clear soups | jr in thick lantil soup. For Salads, Sandwiches and Meats Cube or cut apples in rings, roll in paprika, minced parsley or chives. Hollow out the centers of pickled beets?top with horse radish, relish 3r tartar sauce. Shape cream cheese in small balls I ?roll in crumbled crisp cereal, pap-1 rika, minced parsley or chives. Dip edges of lettuce in paprika. Cut small pickles lengthwise 4 or 5 times starting at tip and cutting not quite to the stem end. Open the slices to make a fan. Pare cucumber curls and cut in crosswise slices 1-2 inch thick. Start ing at the outer edge par.e as thin ly as possible in one continuous strip, to the soft center part. Chill the curls in ice water. For Desserts Toasted dry cereals sprink led on | puddings or ice creams. Cur Jelly cubes from firm color- I ful jelly, to garnish puddings and | chiffon or. cream pies. Crumbled macaroons or ginger | snaps sprinkled on ice cream, chif fon or cream pies. Tint shredded cocoanut very deli cately with vegetable coloring and I use on puddings, cakes, pies or ice | creams. For Beverages Tint water in ice trays when par tially frozen with vegetable coloring, | completely freeze then fill trays with water for fijly volumed cubes. Place chopped fruit, berries or as sorted fruit in each cube compart- I ment of ice tray when partially froz- | Fill ice trays with strong tea, gar nish with mint leaves when partial ly frozen. William V. C. Ruxton, president of the corps, said today that each crew will consist of a unit com mander, two mechanics and twen ty-two drivers. Volunteers should apply at the headquarters of the corps, 46 Ce dar Street, New York City. Con tributions to the purchase of am bulances also should be addressed to the corps at this address. It costs $1800 to buy, equip and maintain an ambulance for a "year, a complete ambulance or any amount toward the purchase of one, no matter how small.
