Spiced C ucumbers 12 ripe cucumbers 1 1*2 cups sugar 2 cups vinegar 1 tsp salt 1 tbsp cloves, whole 1 tbsp allspice, whole 2 tbsp cinnamon bark 1 tbsp white mustard seed Cut cucumbers into slices 1 inch thick or in lengthwise strips. Place in a bowl and sprinkle with 1-2 cup salt. Let stand overnight. Drain and wash in cold water. Mix the sugar, vinegar and spices and boil for five minutes. Add cucumbers and cook ! mixture slowly until tender. When done the cucumbers should be clear in appearance, and the liquid should be the consistency of a medium thick syrup. Pack in clean hot jars and seal immediately. Pickled Watermelon Kind Soak 2 pounds watermelon over night in salt water (3 tablespoons salt to 1 quart water). Drain off brine and cook watermelon rind in clear water until tender. Make a syrup of 2 cups sugar, 2 cups water, 2 cups vinegar, 1 lemon, sliced Ihin, 1 tablespoon cinnamon, 1 teaspoon cloves, and 1 teaspoon allspice. Add rind to hot solution and boil rapid ly until rind is clear. Pack in clean, hot jars and seal immediately Green Pepper Relish 2 dozen green peppers 1-2 dozen red peppers 1 quart onions 1 large head cabbage Chop above ingredients or if you pVefer, grind through coarse blade of food chopper. Put 5 tablespoons salt in mixture and let stand 30 min utes. Squeeze and add to spiced vin egar made of: 1 1-2 quarts vinegar; 2 lbs sugar; 1 oz. mixed spices (tied in cloth bag). Boil vinegar mixture 30 minutes. Add chopped mixture and boil 30 minutes. Pack in hot clean jars and seal at once. Mixed Mustard Pickles 1 medium cauliflower 2 green peppers 1 red pepper 2 cups small white onions 2 lbs. green tomatoes 2 cups very small cucumbers 4 cups unparcd cucumber slices, 1-8 inch thick 1 cup salt (> cups cold water 3 pts. vinegar 2 cups granulated sugar 2 tsp celery seed 3-4 cup sifted all-purpose flour 1-4 lb dry mustard (1 1-4 cups) 3-4 tsp turmeric ; Wash the cauliflower and break into small flowerets. Wash and seed the peppers, cut in halves, then in to 1-4 inch crosswise slices. Pour boiling water over the onions, let stand 5 minutes, then skin. Wash and cut tomatoes in eighths. Mix the cauliflower, peppers, onions, toma to sections, whole small cucumbers, and cucumber slices in a large bowl. Cover with a brine made by com bining the salt and 4 cups of cold water. Let stand overnight; in the morning bring just to a boil in the same water. Drain. Meanwhile heat the vinegar, sugar and celery seed to the boiling point. Mix the flour, mus tard, and turmeric to a paste with the remaining 2 cups water; add this to the hot vinegar mixture while ; stirring cunstantly. Add to the drgln ed vegetables and cook uncovered 20 minutes, stirring constantly. Turn i into hot sterilized preserve jars and | FCftl Malro? 7 pinta?
