HINTS FOR HOMEMAKERS By Mary Brown AlljfOOft, Itomr Service Director, Virginia Electric And Power Company WAYS TO PREPARE CAULIFLOWER Cauliflower, a vegetable of the cabbage family has many possibili ties for being prepared in a tasty and attractive manner. Cauliflower with Tomato Sauce Separate the flowerlets of a head of cauliflower and let them lie in salted water for a while to remove any insects that may be embeddde. Cook until tender in a small amount of salted water. Drain and put into a heated vegetable dish and cover with tomato sauce which has been thickened with moistened flour. For smothered cauliflower, pre pare as above, and cover with but tered bread crumbs and grated cheese and put in oven to brown Cauliflower Delicious 3 c diced cauliflower 1 tsp salt 1-2 c hiilk 1 tbsp butter 1 tbsp flour 1-8 tsp pepper Paprika Cook cauliflower in a small amount of water until tender, add ing salt. Add the milk and thicken slightly with the butter and flour cooked together. Add the pepper and pour into a serving dish Sprinkle with paprika. taunt lower roionaice Remove leaves from cauliflower, cut off stalk and soak 30 minutes in salted water to cover. Cook (head up) 25 minutes or until tender in one quart of boiling water to which has been added 1 pint of milk and 1 tbsp salt. Drain, place in hot serving dish, sprinkle with yolks or two hard cooked eggs put through a sieve and mixed with 1 tbsp of finely chopped parsley and 1-3 cup coarse bread crumbs sauted in butter until deli cately browned. Drained stock may be used as foundation for a creamed vegetable soup. Bermuda Salad Bowl 1 small head cauliflower 1-2 c olives 1 head lettuce 1-2 large Bermuda onion 2-3 c French dressing Remove outer leaves from cauli flower and separate flowerlets. Slice these crosswise into thin slices. Slice onion crosswise and separate into rings. Slice olives. Merinate the cauliflower, onion rings and olives in the French dressing for half an hour. Just before serving add shred ded lettuce and cheese' Mix together in sulad bowl until lettuce is thor oughly coated with French dress ing Serves 8.
