Tossed Salad
Chop and combine: 10 radishes. 2
cucumbers. 1-3 cup sliced scallions,
1 -4 cup chopped celery, and a bunch
of washed watercress Mix in a wood
en bowl with Tangy French Dress
ing, made this way Blend together
3 tablespoons vinegar. 1-2 cup ma
zola, 1-2 teaspoon salt. 1-2 teaspoon
Worcestershire sauce. 2 drops ta
basco sauce and 1 tablespoon French
dressing Mix. pour over salad and
toss
Creole Salad
7 can pineapple (drained)
3 pkgs. cream cheese
2 tbsp granulated gelatine
1 cup almonds, blanched and split
1-2 pt cream, whipped
1 green pepper, minced
Soak gelatine in part of pineapple
juice. Heat remainder and dissolve
gelatine. When cold, add cream

Pineapple and almonds. When begin
nng to set. add whipped cream, pinch
if cayenne and salt to taste Mold,
serve with mayonnaise or Especial
Fruit Salad Dressing
Especial Fruit Salad Dressing
1 cup pineapple juice
Juice 1 lemon
Juice 1 orange
1-2 tsp salt
1-4 cup sugar
1 tbsp corn starch
1 tsp dry mustard
2 eggs
1 cup whipped cream
Mix dry ingredients. Combine
ruit juices, add to other mixtures
)ook in top of double boiler until !
hick. Beat egg yolks well and add
l> cooked mixture. Cook five min
tos more. Beat egg whites well
Combine with cooked mixture. Cool
Just before serving, cut in whipped
cream
Rhubarb Cheese Pastry Tarts
Cheese Pastry
1 3-4 cups flour
! tsp salt
1-2 cup shortening
2-3 cup American cheese, grated
1-4 cup ice water
Cut in shortening and add the
cheese. Add water and mix lightly.
Chill, then roll out as for pie crust.
Fit pastry over inverted tart or muf
fin tins. Prick well Bake about 25
minutes at 450*
Host Rhubarb
2 cups rhubarb, cut in 1 inch pieces
3-4 cup sugar
3-4.cup boiling water
3 1-2 tbsp minute tapioca
1-4 cup orange jutce
Cook rhubarb, sugar and boiling
water for 5 minutes. Reduce heat
and and cook 5 minutes longer. Add
tapioca, stir well, cook 15 minutes
longer on a low heat Remove, add
orange juice; cool. Fill baked tart
shells, top with whipped cream or
meringue.
Pecan Chocolate Mousse
2 squares.unsweetened chocolate
1 3-4 cups milk
1-3 cup sugar
4 egg yolks, slightly beaten
1 pkg strawberry flavored gelatin
1 -4 tsp salt
1 2 tsp vanilla
1-2 cup chopped pecan meats
1 cup cream, whipped
Add chocolate to milk and heat in
double boiler When chocolate is
melted, beat with rotary egg beater
until blended. Combine sugar and
egg yolks; add small amount of choc
olate mixture, stirring vigorously;
return to double boiler and cook un
til thickened, stirring constantly.
Add gelatin and salt and stir until
gelatin is dissolved. Chili. When
lightly thickened, add vanilla and
old in nuts and cream. Turn into
hdividual molds. Chill until firm.
Serves eight.

of the town of Williamston, N. C.,
hereinafter described. There will be
no auction. The bonds are dated
March 1. 1941; denomination $1000;
principal and interest (M & S 1) pay
able in lawful money in New York
City; coupon bonds not registerable;
general obligations; unlimited tax;
no option of payment before matur
ity; delivery at place of purchaser's
choice.
Bidders may submit bids for the
bonds described in any of the fol
lowing paragraphs:
(1) For $35,000 Public Improve
ment Bonds maturing annually on
March 1. $2000, 1943 to 1955, inclus
ive. $4000. 1956 and 1957. and $1000.
