Virginia Electric | And Power Company j Rhubarb?doesn't it just make your mouth water when you visualize its lovely rosy color and its delightful tangy taste. Versalite too for it is equally good as vegetable or fruit. Rhubarb is usually best in the first blush of youth. Cook it gently then not over a scant half hour. Later I creeping age necessitates longer cooking and more sugar. Rhubarb-Strawberry Pinwhecls 1 cup diced rhubarb 1 cup diced strawherrig* 3-4 cup sugar 3-4 cup water 2 cups sifted flour 3 tsp all-phosphate baking powder 1-2 tsp salt (i tbsp shortening 1-2 cup top milk 1-4 cup milk 2 tbsp butter Combine rhubarb and strawber ries. Combine sugar and water, cook 10 minutes and stir until sugar dis solves. Sift flour, baking powder and salt together. Work in shortening un til mixture is like coarse cornmeal Add top milk, and milk mixed to gether. and stir until all flour is dampened. Roll dough in oblong shapes. Spread rhubarb and straw berries on dough Roll up like jelly roll and slice 1 1-4 inches thick. Lay slices in baking pan. Pour the hot sugar syrup into the same pan and dot slices with butter. Bake in very hot oven (450* F.) 20 minutes Serve with a marshmallow sauce or whip ped cream. Serves 8 or 9. Serve as dessert or bridge refreshments, with fresh, hot coffee. Date-Rhubarb Pie 2-3 cup sugar 1 12 tbsp flour I egg. beaten 3 cups stewed rhubarb 1 cup sliced pasteurized dates Plain pastry ?Mix .sugar ami flour.?add to the ? beaten egg; mix with the rhubarb and dates. Put in a pastry lined pie pan and cover with strips of pastry j arranged lattice form. Bake in a hot oven (425* F.) for 25 to 30 minutes Serves 6 to 8. Serve with coffee and whipped cream. Banana Rhubarb Betty 2 firm bananas 1 1 2 cups cut tender rhubarb (1 in. pieces) 1 1-2 tbsp grated orange rind 1-2 cup firmly packed brown sugar 1 4 tsp salt 2 tbsp hot water 2 cups soft bread crumbs 3 tbsp melted butter Use all yellow bananas. Peel ba nanas and cut into 1-2 inch slices Combine bananas, rhubarb, orange, rind, sugar, salt and water Mix to gether crumbs and butter. Place al ternatc layers of crumbs and fruit | mixture into a well buttered baking dish (capacity 1 1-2 quarts) using crumbs for top and bottom layers Cover baking dish and bake in a moderate oven (375* F.) for 35 to 40 minutes, or until rhubarb is tender. Remove cover and continue baking 5 minutes to brown the crumbs. Serve hot with plain or sweetened whipped cream. Six servings Sunny Southland Rhubarb Sherbert 1 tbsp gelatine 1-4 cup cold water 3-4 cup water \ 1 cup boiling water I No. 2 can Florida grapefruit juice 1-2 cup rhubarb juice (strained from stewed rhubarb) 1 egg white Soak gelatine in cold water; dis solve gelatine and sugar in boiling water; cool Add fruit juices. Freeze to a mush. Fold in beaten egg white \ and continue -freezing until firm. To serve, place a large spoonful or | scoop into sherbet glass, fill up with ] ginger ale. garnish with mint, and serve Serves t>. Spiced Rhubarb 4 cups rhubarb (cut Dash of mace nt 1-m. pieces 1-2 cup light karo 1-2 cup sugar I -4 tsp cinnamon ? 2 whole cloves I Florida orange, grated rind and juice Place all ingredients in a casser ole Cover ami bake in a moderate oven (300* F ) for 30 minutes.
