JAMS, JELLIES AND CONSERVES
There's nothing more satisfying to
the hostess than a well-stocked cup
board with row after row of delicious
jams and conserves. Nothing adds
more to that Sunday night supper
than hot biscuits with fig preserves
or grape conserve. These sweet
spreads are very simple to make if
recipes are closely followed. Here
arc a few of our favorites.
Fig Preserves
Select slightly under-ripe fruit.
Place in bowl, cover with boiling
water to which alum has been add
ed (2 tsp to 1 qt water) Allow to
cool, drain fruit and remove skins,
if desired, do not remove stem.
Weigh and use 1 lb. figs and 3-4 lb. [
sugar Place in alternate layers in I
large preserving kettle. Allow to
stand in ice box overnight. In morn
ing add lemon juice and ginger root
according to taste, bring to boil
slowly and simmer until figs are i
clear and can be pierced easily with
a straw. Pack figs in jars and con- j
iinue cooking syrup until thick, pour ;
over fruit and seal tightly.
Orange Marmalade
6 oranges
3 lemons
Hentove and discard the thin yel
low rind from half of the oranges
Cut oranges and lemons into "very
thin slices, and for every measure of
fruit add three measures of water.
Let stand overnight. Cook until fruit
disintegrates. Measure and add an
equal volume of sugar. Cook to 320
degrees K. The finished marmalade
should have the consistency of jelly,.
A combination of lemon and orange
give a more delicate flavor than
orange alone.
Seuppernong Grape Butter
Put grapes on with barely enough ,
water to cover. Cook until soft, |
strain through' colander to remove
seeds and skins. Add 1 pint sugar to
1 pint pulp and juice. Cook until [
thick, stirring frequently. Just be-1
fore removing from range, add cin
namon. cloves and spice to taste.
Grape Conserve
4 pts. seeded grapes
6 csugar
2 c English walnuts (broken into,
small pieces)
Cook grapes and sugar together j
as for jam The juice of 1 orange and
the peel of 1-2 orange, cut in small
pieces, may be added for variation.
Add nut meats 5 minutes before re
moving from the fire. Seal in clean,
hot jars.
Grape Jelly

Pick over, wash and remove stems
of grapes. Put into a preserving ket
tle and heat to boiling point, mash
and boil slowly 30 minutes. Strain
through a coarse strainer, then al
lows juice to dr ip through a double
thickness of cheese-cloth or a jelly
bag. Measure, bring to boiling point
and boil 5 minutes. Add an equal
quantity of heated sugar, boil 3
minutes, skim and pour into glasses.
Cover with melted paraffin and keep
in a cool, dry place.
