HINTS FOR HOMEMAKERS By Irene James, Home Service Director, Virginia Electric And Power Company "CALL FOR SALADS" _ Salads are the vogue at this time of the year. Today we are urged by food specialists to eat some fresh, raw vegetables and fruits each day, as they are known to be excellent sources of vitamins and minerals Salads offer such opportunities for variety that thev might be consid ered the most logical place to include the use of both vegetables and fruits in the daily food requirements. Sal ads may take so many auierent forms in a meal that variety is no problem; they can be used as the appetizer or "starter" course; the trranr'dish; a dessert, or they may ac company the dinner course. What more versatile dish could be found? The characteristics of a good sal ad are simple and fairly easy to ac complish; namely, it should be well chilled before serving; have an at tractive arrangement; it can be sim ple but should have some form and plan about it. Beet Ring with Potato Salad Filling 6 medium cooked diced beets 3 cups beet liquid and water 2 tbsp chopped green pepper 12 cup sugar 3 tbsp lemon Juice 1 cup celery, diced 1-2 cup white vinegar Salt Pepper 3 tbsp gelatine 1-4 cup cold water Use liquid from beets and add en ough water to make 3 cups. Combine all ingredients except gelatin, and boil for 5 minutes. Soak gelatin in 1-4 cup cold water. Add dissolved gelatin to hot mixture Pour into ring mold. Cool and place in refrigerator to harden. Potato Salad 4 cups diced hot potatoes 1 tsp salt 1-8 tsp pepper 1-3 cup vinegar 1-3 cup mayonnaise 1 onion, finely chopped 1-2 cup chopped celery 1-2 cup chopped gherkins 1-3 cup thinly sliced radishes. Season potatoes with salt and pep per and marinate with vinegar. Let stand until cold. Add remaining in gredients and toss together lightly. To serve, place Beet Ring on large round plate, place potato salad in lettuce cups around ring, garnish with hard cooked eggs. Partly fill the center of the ring with shredded Imtrrne^ind^dace^^reel^peppcr cup filled with mayonnaise in the cen ter Ham Mousse Salad Plate 1 tbsp plain gelatin 1-4 cup cold water 2 cups stock or bouillon 1-2 cup mayonnaise 1-2 cup diced celery 1-4 cup diced dill pickle 1-4 cup minced pimento 1 cup chopped cooked ham Soak gelatin in cold water for 5 minutes. Heat stock or bouillon to boiling point and add the soaked gelatin. Stir until dissolved. Chill until slightly thickened, then whip in the mayonnaise. Add remaining ingredients, pour into ring mold; chill until firm. Unmold on salad plate, garnish with salad greens and relish. Suggestions: Accompanl ments for salad plate: Tomato Aspic Cubes, deviled eggs, carrot strips, canned peas?maiinati d1 in French Dressing, ripe olives, celery hearts. Tart Salad Bowl 2 cups shredded cabbage 1 cup shredded carrot 1 2 cup shredded pineapple 1-2 cup cottage cheese 1-2 cup sweet pickles, cut fine 1-4 cup vinegar 1-2 cup mayonnaise Salt and pepper to taste Combine all ingredients and toss lightly with a fork until well mixed. Chill. The amount of mayonnaise will vary slightly according to the amount of moisture present in the other ingredients. Frozen Walnut Salad 2-3 oz. cakes cream cheese 1 tsp salt 1 -2 cup mayonnaise Juice of 1 lemon 1-2 cup crushed -pineapple-drain ed S~medium size bananas?sliced 1-2 cUp broken walnuts 1 2 cup maraschino cherries in halves 1 cup w hipping cream Crisp salad greens, whole walnut kernels and fresh fruit for garnish ing Mix cream cheese with salt, may onnaise and lemon juice; then add crushed pineapple, sliced bananas, broken walnut meats and cherries. Fold in cream that has been whip ped and pour into cold dry freezing tray. Freeze until firm. Arrange whole mold or slices of it on a bed of crisp salad greens, garnish with whole nuts and fresh fruits, such as sections of oranges, grapefruit or fresh strawberries. ? Leaves for Atlanta Ray H.
