HINTS FOR HOMEMAKERS By Irene Jimei, Service Director, Virginia Electric And Fewer Company SIMMER TIME MEAL SUGGESTIONS Modern homemakers study nutri tion rules and make sure their fam ilies get plenty of fresh milk, plen ty of fruits and vegetables. They use enriched bread and whole wheat cereals; they use evaporated milk for cooking; they buy vitamin-forti fied margarine if their budget does not permit butter. They use dried beans and peas and peanut butter frequently. They serve green and yellow vegetables each day. They use seasonings with a knowing hand, and make a point of serving attract ive meals. They should be proud of the job they are doing. Try these for suppers these hot nights to save time and energy for other things. The whole family will t>e pleased with this simple menu: Jellied Pork Sauted Pineapple Crisp Potato Chips Buttered Rolls Cucumber Salad Iced Tea Iced Watermelon To prepare the jellied pork, let the meat simmer until it falls from the bones, season well with salt and pepper, and mold in lemon gelatin. Soute the pineapple lightly in hot butter to a delicate brown. Slice po tatoes thin, dry on a towel, and fry a few at a time in deep fat (400 deg. F.) until crisp and golden brown. For the salad, mix together one cup of diced, peeled cucumbers, one cup cut, cooked vegetables, one table spoon of finely chopped onion, and 1 -4 cup French dressing. Let stand at least one hour to chill in refrig erator before serving on crisp let tuce. Refrigerator Rolls 2 c boiling water 1-2 c sugar 1 tbsp salt 2 tbsp shortening 2 beaten eggs 2 cakes yeast 8 c bread flour (sifted before meas uring) 1-4 c lukewarm water Mix boiling water, sugar, salt and shortening together and cool to lukewarm. Soften yeast in lukewarm water and stir into first mixture. Add eggs (well beaten) and 4 cups of flour and knead thoroughly. Stir in remainder of flour, but do not knead. Cover and put in refrigerator. Shape amount you want into rolls and let double in bulk, about 2 hours, before ready to bake. Leave the re mainder of dough in refrigerator at a low temperature until needed. This will keep a week. Following are some extras to have on hand for unexpected guests when the weather is hot: Veal Loaf 1 1-2 lbs ground veal 1 c cracker crumbs 3 eggs 1 1-2 c milk 2 tap salt 1 tbsp each chopped onion and parsley 1 small can pimento, cut fine Mix all ingredients together and pour into greased loaf tin. Bake at 350* F. for one hour. Potato Salad in Aspic 4 c tomato juice cocktail Seasoning to taste Lettuce and Mayonnaise ?1 'bep plain gaintln ?nolr~4 in L tbsp cold water Potato salad Hard cooked eggs Dissolve gelatin over hot water and add to heated tomato juice. Add seasonings. Partially congeal in re frigerator, then add potato salad Pour into mold. When thoroughly congealed, unmold on platter and garnish with lettuce, slices of egg and mayonnaise, if desired. Date and Nnt Bread 3-4 c dates 1-2 c boiling water 1-2 tsp soda 1 c corn sirup 1 egg 1 3-4 c flour 1-2 tsp baking powder 1-2 tap salt 2 tbsp shortening 1 c nut meats Cover dates with boiling water, add soda and let stand until cold. Add com sirup and egg, blending htoroughly. Add dry ingredients, melt shortening and nuts. Bake 45 to 60 minutes at 375 deg. F. a Re torn to Greenville Mrs. W. C. James, of Weeks Till*, to Staff Sergeant Dixie Daw Roberson, of the Army Air Corps, Eglin Field, Fla., son of Mr. and Mrs. Harvey Robreson, of Roberaonville, took place Saturday afternoon, July 18th, at Salem Baptist Church in Weeksville. The ceremony was per formed by Dr. E. H. Potts, of Eliza beth City. The church was decorated with palms, white gladioli and candles in candelabra and the wedding music was played by Mrs. Vernon G. James of Weeksville, sister-in-law of the bride. The bride was given in marriage by her father and wore a wedding gown of lace trimmed white dotted swiss, with white picture hat and ac cessories to match. Her flowers were a shoulder corsage of pink rose buds and baby's breath. Mrs. Norman Trueblood, of Hert ford, sister of the bride, was maid of honor and wore an afternoon dress of light blue mesh with white ac cessories, and a corsage of talisman roses. Misa Jemima James, uf Ai lington, N. J., and Mrs. Howard S. Morisette, of Norfolk, sisters of the bride, were bridesmaids, and wore afternoon dresses of lace trimmed sheer voile of pastel shades with matching accessories and shoulder corsages of red roses. Alvernon Rogerson, of Norfolk, Va., was best man and the ushers were Sergeant William G. James, of Camp Davis, N. C., brother of the bride, and Rodney Roberson, broth er of the bridegroom. Mrs. James, mother of the bride, and Mrs. Roberson, mother of the bridegroom, wore dresses of navy blue chiffon with accessories to match and both wore shoulder cor sages of white roses. Immediately after the ceremony a reception was given at the home of Mr. and Mrs. Norman Trueblood in Hertford. Later Sergeant and Mrs. Roberson left for a short wedding trip. Mrs. Roberson taught school in Robersonville several years, resign ing to accept a position with the Vir ginia Electric and Power Company, Williamston, as the company's home economist.
