Not a leader out of 17 clubs failed to be hostess and give the demonstration. The recreation leaders had charge of the recreational part of the pro gram. Alba club reported as follows: food frozen 25 lbs. and lOpints; , canned 88t pints; made 9 garments and 1 crochet rug; 2 rooms painted ! and combination freezer and re frigerator bought. The Creswell Home Demonstra tion Club met with Mrs. Fred Smithson July 19. A very good re port was given as follows: Painted 2 porch floors, 3 rooms and porch furniture; Canned 100 pints, froze 75 pints, made 14 dresses, altered 5 dresses, 1 new kitchen rug, 2 rocKers, 1 window fan, 2 porch boxes and 1 flower garden planted. Mrs. Smith, the club's nutrition leader, gave the demonstration on f ruits to Top the Meals.” After the demonstration the hostess then served baked pear halves on cake. The meeting was then adjourned until its September meeting. Takes Knowledge Buy Food Wisely "How does the consumer decide on what is a good buy?” asks George Abshier, extension consum er marketing specialist at State College. He says that wise food buying requires a high degree of skill and a broad knowledge of many products. In its simplest economic terms, according to Abshier, a good buy is determined by the amount of satisfaction received per unit of I cost, compared to other choices. Proper judgment of the real cost, says Abshire, involves calculation of cost per pound, and the ulti mate cost per serving of the final edible product. If you are preparing kale, strip leaves off the woody midribs. Wash vegetables thoroughly, us ing plenty of water for leafy greens. Lift vegetables out of the water instead of pouring the water off the vegetable. That way, grit, which settles to the bottom of the pan, isn’t poured back over the vegetables. or canned, and the manner of pack aging. According to Abshier, conven ience of preparation, serving and storing should be considered. Pre pared foods provide greater con-| venience at greater cost. The ex-: tra cost of this “built-in maid serv ice’’ may offset the time and ener gy saved, especially for homemak ers working outside the home. The satisfaction a food provides the consumer is the major test in determining a good buy. The taste, attractiveness, and general quality affect the satisfaction. Wise buying is a big job, says, Abshire, and determining the good buys is a matter of weighing all the factors. The results will vary, but the final test is whether the maximum amount of family satis faction is obtained from the ex penditure for food. -«■ Smaller Potato Crop in Acreage, Acreage Yield Raleigh. — Based upon reports from growers as of July 1, a potato crop of 4,578,000 bushels is fore cast for 1956, according to the North Carolina Crop Reporting Service. The current production estimate is about 20 per cent below 1955. July 1 prospects point to a yield per acre of 127 bushels, compared with 155 last year. Acreage for harvest is estimated to be 36,000 acres, compared with 37,000 last year; thus, the decreas ed production is attributed to both reduced yields and a reduction in acreage. - -—-..■ Soak brussels sprouts and broc coli 30 minutes to an hour in cold salt water to remove any insects in the tight leaves of flower buds. Dust venetion blinds weekly with a lamb’s wool duster or vacuum attachment. Then tilt the slats dow nand wipe with a cloth or sponge wrung almost dry from warm soapsuds; repeat with slats turned up. When necessary, im merse blinds in a deep washtub or bathtub full of warm soapsuds. Scrub tapes on both sides with a well-lathered brush, and lift the opened blind up and down through suds and rinses. Drain, wipe, and let blinds hang free while drying to prevent tapes from shrinking.
