Club Meets With Mrs. Ridley The Fisher Creek Home Demonstration club met Friday, Feb. 24, at 1 o'clock with the club president, Mrs. Oole Ridley. Mrs. Ridley presided over the business at which time the members voted | to continue sponsoring the radio programs with the proceeds going to the Asheville Orthopedic, Home, the club's special project. Meeting At Qualla The Qualla Home Demonstration club met with Mrs. Golman Kinsland on Tuesday afternoon at 2:30 for the second meeting of the year. The meeting was opened by the presidents Mrs. June Shelton. After the usual business was disposed of Mrs. Shelton made two important announcements concerning county-wide meetings. Plans were made forwarious members to attend these meetings. In the absence of the home a-, gent, the program was in charge of Mrs. Shelton. She led a very interesting and informative discussion on "Take Time to be a Good Citizen". All the members participated. The duties and res" - ?? ?* ponsibilities or au nome ueiuonstration club members were read to the group. Mrs. Frances Hughes was welcomed into the club as a new member, and Mrs. Minnie Kinsland was a visitor. At the conclusion of the meeting the hostess served delicious fruit salad, cake, and coffee. Mrs. June Shelton will be hostess for the meeting in March. * * * * * Miss Dillard Of Ohio Is Married Miss Willa Mae Dillard of Dayton, Ohio, formally of Sylva, became the bride of Phillip tyorbury of Green Creek, New Jersey on February 18 in Richmond, Indiana. For her wedding Mrs. Norbury wore a navy blue suit with which she used white accessories. The bride is the daughter of Mr. Will Dillard of Sylva and the ' late Mrs. Dillard. The will reside in Dayton where hnth are now employed. Cullowhee Woman's Club Hears Dr. Janowsky The monthly meeting of the Cullowhee Women's club was held in Moore parlors Tuesday, Feb 21, with Mrs. Rosser H. Taylor president, in charge. Mrs. Chas. McConnell, Mrs Edith Hall, and Miss Fannie Goodman were program committee foi the month. Dr. Carl C. Janowsky was guesl speaker for the evening, using a: his topic, "Individual Responsibility for Government." He discussed needs of the local healtl department, and also the neec for industries to provide adequati income to obtain essentials fo decent living. He told of th< .need for education in matter necessary to good health, clean liness, and good food, stressing th importance of individual letters t senators discussing the vital nee* of giving more toward welfare o our children. Dr. Janowsky toll of some of the existing condition and actual cases coming to th local health department and o the tragic needs of more adequat facilities for the department. Hugh Ferguson, of Nashville, preached at the Methodist church Sunday morning. His theme was "The Trails of Job." This is his former home. His wife, also his parents, Mr. and Mrs. H. G. Ferguson, of West Jeffersqn, and a number of former friends and acquaintances were present for the service. Rev. B1U Mills, the new pastor, preached at the Baptist church to a large and attentive audience Sunday mor/iing. Mrs. A. t>. Parker, of Sylva, cn?nt the week-end here with rel-J atives. C. Norton of Sylva, Friday, February 24 at 7:30 p.m. at the home of Rev. Ditlard Wood. Rev. Mr. Wood officiated using the double ring ceremony. Mrs. Geneva Kirchberg was named chairman of the finance committee. Miss Lucille Hunt gave a brief report on the Girl Scout meetings which have been held recently in interest of a full time Scout leader for the Area. The present project of the club is disposing of an electric washing machine and The monthly dinner meeting of the Business and Professional Women's club was held Monday evening at the American Legion home. A delicious dinner was serironer and the sale of tickets were discussed. The club members voted to accept the rule as adopted some time ago ' in enforcing the regulation that any member absent from a meeting without notifying Dr. Noracella Wilson on Saturday prior to the following Monday night meeting will be expected to pay the full price of the supper. Miss Evelyn Sherrill, treasurer, will be expected to mail cards notifying members who fail to comply with the ruling. Miss Mary Johnston, program chairman for the meeting, introduced W. T. Brown, county farm agent, and Paul Laughrun, State field representative of the Farmers Home Administration, of Raleigh, the latter as the guest speaker of the evening. Summarizing Mr. Laughrun's informative talk on the farmer and farm family problems and the part F.H.A. plays in dealing with the problergg, he first pointed out the following problems facing agriculture today: 1?Need for higher education among farm families; 2 ?soil conservation and better % land use; 3?unstabilized farm prices; 4??poor marketing and distribution of farm produce; 5? over production of certain farm crops; 6?weather; 7?pests (insects, bugs, diseases); 8?mechanization; 9?need for balanced economy in industry (opportunity to get industry to supplement farm incomes); 10?poor housing and sanitation of some farm families and animal*; 11?lack of diversification in agriculture; 12?lack of credit (for half of lower half of farmer bracket). To cope with these problems Mr. Laughrun mentioned the following assistances beirffe offered by State agencies to farmer problems today: farm agents, home agents, 4-H club workers, and assistants to each of these three agencies; experiment stations; production and marketing associations; home economics and agriculture teachers ' in the high schools; and Farmers Home Administration. March marks the first anniversary of the Sylva B. and P. W. club, and it was decided to have I a party for the March 27th meeting. Miss Hattie Hilda Sutton was named program chairman, Misses Jane Coward and Dorothy Williams will be in charge of decorations, and Mrs. Noracella Wil1 j son will be in charge of place arrangement. ZEE Ways to Cut th< By ALICE DENHOFF DEMANDS on the budget are many this time of year, but the good, conscientious homemaker won't stint when it comes to family meals. Instead she works out menus that are healthful, satisfying, tasty, using low-cost staples and transforming them into fine fare. She also works wonders with left-overs. For instance, there's that left-over roast. Why not do the right thing and serve it as "roast in a blanket"? Just slice the meat in good, thick, he-man slices, and place in well-greased baking pan. Cover with gravy. Over all spread your favorite stuffing (dry bread, seasoning and liquid, you know). Bake until stuffing is done. Remove from pan and serve on platters with perhaps some broiled tomatoes around it for color. For another good, but inexpensive dish, cube one lb. of a thrifty cut of steak such as chuck. Brown in hot fat. Add one c. boiling water and L one tsp. cornstarch mixed with a little cold water, and salt and pepper to taste. Stir until mixture is > boiling. Add one large green pepper cut in squares and 2 large sweet onions cut in eighths. Cover and simmer until steak is tender. The gravy may be thickened with a few drops of seasoning sauce. Have 2 lb. lamb chuck, shank or neck cut in 2 inch cubes. Add to beans, season with salt and pepper, and celery salt; cover with water. Simmer until done, about 2 hours* Brisket of Beef Boiled brisket of beef with plenty of horseradish sauce is a plebian dish, it's true. But just the same, it appears on a stated day eaeh week at many ef the finest club restaurants in the land, and you'd be astonished to see the men who lick their platters clean, leaving not a smidgin* of meat. Here's how it is done at a famous dining club. Fry out a few slices of salt pork, and in this, brown the beef brisket which has been dredged with flour. Place meat tn large kettle, add e. cubed turnips, a large onion cubed, H c. cubed carrots and 3 c. water.
